SUJI DHOKLA

Curd- ½ Cup
Water – 1 Cup
Rava- 1 Cup
Salt- ½ tsp
Ginger- 1 inch
Oil- 2 tsp
ENO- 1 tbsp
Black pepper- 1/8th tsp
Red pepper- 1/8th tsp

Oil- 2 Tbsp
Mustard Seeds- ½ tsp
Kadi Patta-few
Safed Til- ½ tsp

Method

Lets make Super Soft Super Fast Rawa Dhokla

Take a Bowl
Add ½ Cup Curd
Add 1 Cup water to this and mix it very well
Now add 1 Cup Rava- portion by portion to avoid any lumps
Keep this aside for atleast 20 min
Season it with ½ tsp Salt and grate some ginger in it as per your taste
Add 2 tsp of oil and Mix it well
At the end add 1 tbsp of Eno and mix it in one direction for few seconds to create some air in the better

Now make a plate or container steam ready by brushing some oil and pour this better in it
Sprinkle some Black and red pepper on to it

Steam this for 12-15 min

Temper it with some mustard seads, Kadi pata and white til

Cut it into pieces Serve with your favoriate chutni & ENJOY

Dahi Wale Aaloo


Ingredients

Aaloo- 3 No.
Cashew- 1 tbsp
Mustard oil- 2 tbsp
Kashmiri lal mirch- 2 tsp
Haldi- 1 tsp
Salt- 2 tsp
Cooriander powder- 3 tsp
Jeera Powder- ½ tsp
Saunf -1 tsp
Kasuri methi- 1 tsp
Curd – 1 cup
Jeera- 1tsp
Long- 2
Cardamom- 2
Ginger
Green Chilli
Veg Oil- 2 tbsp
Coriander leaves

Method

Take Potato
Cut the potatoes into pieces
Soak cashews in hot water for 1hour than make a smooth paste of it
In a bowl take some mustard oil
Add Red chilli powder, haldi, salt, coriander powder, jeera powder, fennel powder and kasuri methi
Marinate potato in this masala for 15-20 min
Take a pan
Add some oil, fry marinated potato in the same till crispy and cooked well
Whisk curd well , add kashmiri mirch, kasuri methi & cashew paste in it

In a pan take some oil, add jeera, clove , cardamom , kashmiri lal mirch , ginger and green chillies
Add curd mix and some water
Now add fried potato in it
Cover for potatos to cook well
Remove from flame once the gravy is smooth and releases some oil
Garnish with coriander leave
Enjoy with naan.

Karela Masala
Sureshot bitterless Karela Recipe


KARELA MASALA

Karela/ Bitter Gourd- 250 gms
Salt- 2 tsp
Haldi- ½ tsp
Lemon Juice- 2 tbsp

Red Chilli Powder- 1 ½ tsp
Haldi- 1 tsp
Salt- 1 ½ tsp
Dhaniya Powder- 2 tsp
Amchoor Powder- 2 tsp
Rice Powder- 2 tbsp
Besan- 1 tbsp

Mustard Oil- 5 tbsp
Onion- 2
Jeera- 1 tsp
Mustard seeds- ½ tsp

Coriander leaves- 1 tbsp

Cut Karele in slices
Add Salt, Haldi and lemon juice
Keep it aside for 20-25min
Squeeze access water from Karele – this will release all bitterness
Add Mirchi, haldi, namak, dhaniya powder aur aamchur, chawal ka aata and besan
Take a Kadai add Sarso ka oil
Shallow fry Karele in this till they are crispy
In the same Kadai take some oil , add jeera, mustard seeds and sliced onion
Sauté them well till Onions are translucent
Add namak, mirch, haldi aur dhaniya powder
Add shallow fried karele
Mix well and cover it and let it cook for 5-7 min on low flame
Bitternessless Tasty Karele are ready to be served with Pranthas

CHICKEN TIKKA MASALA

Ingredients

For Marination of Chicken Tikka

Boneless Chicken- 500 gms
Kashmiri Lal mirchi Powder- 1 tsp
Dhaniya Powder- 3 tsp
Haldi-1 tsp
Jeera powder- 1 tsp
Garam Masala- 2 tsp
Red Chilli Powder- 1 tsp
Kasoori Methi –1 tsp
Namak- 2 tsp
Ginger Garlic Chilli Paste- 2 tbsp
Thick Curd- 2 tbsp
Mustard Oil- 1 tbsp
Butter- 1 tbsp

For Tikka Masala

Cooking oil- 4 tbsp
Shah Jeera- ½ tsp
Cloves- 3-4
Cardamom- 2-3
Chopped Onions- 2
Chopped Tomatoes- 1
Ginger Garlic Chilli Paste- 2 tbsp
Haldi-1 tsp
Red Chilli Powder- 2 tsp
Kasoori Methi –1 tsp
Namak- 2 tsp
Kashmiri Lal mirchi Powder- 1 tsp
Chicken Masala- 2 tsp
Tomato puree- ¼ cup
Cashew Paste- ¼ cup
Thick Cream- 2 tbsp

Method

In a bowl take well cleaned boneless chicken chunks
Add Kashmiri lal mirch powder
Dhaniya Powder
Haldi
Jeera powder
Garam Masala
Red Chilli Powder
Kasoori Methi
Namak
Ginger Garlic Chilli Paste
Thick Curd
Mustard Oil
Mix all well and keep it aside to marinate for 30 min

Now take a Grill Pan
Brush butter generously
Place marinated chicken in the grill pan

Grill Chicken tikka on grill pan from both the sides
Roast chicken tikka on the flame directly to give that smoky effect

For Masala gravy,
Take a pan
Add oil , shah jeera, cloves and green cardamom

Add chopped Onions
Sauté till they are golden brown
Add red chilly powder, haldi, dhaniya powder and garam masala and mix well

Add Ginger, garlic chilli paste, chopped tomatoes, salt

Mix all well

Cover it and let the masala cook for 10 min

After 10 min il will start releasing, add Tomato puree, kashmiri lal mirch, kasoori methi and hot water as per the gravy consistency

Add cashew paste
Mix all well and cover for another 5 min

Add roasted chicken tikka and let the chicken cook in the gravy masala for 10-15 min
At the end add some coriander leaves and cream, mix well and cover for 2-3 min more
Super delicious chicken tikka masala is ready .. Enjoy

Mushroom Mutter Masala

Mushroom Matar Masala

Ingredients
Mushrooms- 1 cup
Matar- 1 cup
Butter - 1 tbsp
Oil- 2 tbsp
Onion- 2 No.
Tomato - 2 No.
Garlic cloves- 5-6
Grated Ginger
Green Chilly- 4 No.
Tej Patta- 2
Curd- 1/4 cup
Kitchen King Masala- 2 tbsp
Dhaniya Powder- 1tsp
Red Chilli powder- 1 tsp
Kashmiri Lal Mirch - 1 tsp
Haldi - 1/4 tsp
Jeera Powder- 1 tsp
Salt to taste

Method

Clean 1 cup of Mushrooms thoroughly by rubbing wheat flour on it n washing with hot water
Cut mushrooms in four slit pieces
Apply and marinate mushroom with Kitchen King Masala
Saute marinated mushroom in 1 tbsp of butter and keep it aside

To make Matar Mushroom Masala-
Roughly chop onions- 2 no.
Tomato- 2 no.
Green chilly- 2 no.
Garlic cloves 5-6 &
Grate Ginger piece
Now take a cooker , add oil 2 tbsp
Add chopped onion
saute till onion turns translucent
Add Garlic, Ginger, Green chilly and tej patta
Add chopped tomato
saute all well
Add Salt to taste
Dhaniya powder - 1 tsp
Mirchi Powder- 1 tsp
Haldi Powder- 1/4 tsp and
Jeera Powder- 1 tsp
Mix all well
Add water
Close the cooker and keep it on low flame for 3-4 min after 1 whistle
Once cooker releases its pressure automatically, Saute masala well till its oil releases
Now Add Kashmiri lal mirch powder - 1 tbsp in curd and mix well
Add this curd mix in cooker
Mix it well
Add Sauted Mushrooms and mix well
Add hot water as per the gravy requirement
Close the cooker and keep it on low flame for few min after 1 whistle
Once cooker releases its pressure of its own add blanched green peas- 1/2 cup in it
Cover the cooker with a plate and keep it on low flame for 2-3 min for peas to get fairly mixed in masala
Enjoy Mushroom Matar Masala by serving it with any kind of Roti, Naan, Parantha or even rice

UPMA & POHA
Must try tomorrow Sunday Morning Breakfast


For UPMA

Ingredients

Suji- 1 cup
Oil- 2 tbsp
Cashew- ¼ cup
Mustard seeds- ½ tsp
Curry Patta- few
Onion- ¼ cup
Urad dal- 1 tsp
Channa dal- 1 tsp
Mixed veg (Mattar, carrot, beans)- ½ cup
Water- 3 cups
Sugar- ½ tsp
Salt to taste
Chopped Green Chilli- 2
Chopped coriander leaves- few
Ghee- 1 tsp

For POHA

Ingredients

Poha – 1 Cup
Oil- 2 tbsp
Chopped Onion- 2
Salt to taste
Sugar- 1/2 tsp
Groundnut- 1 tbsp
Mustard seeds- 1 tsp
Jeera- 1 tsp
Chopped coriander leaves- 1 tbsp
Blanched peas- ½ cup
Curry leaves- Few
Green chilli- 2
Tomato – ½
Haldi powder- ½ tsp
Lemon- ½

Method

Upma

Dry Roast 1 cup Suji
In a kadai add 2 tbsp of oil , fry cashews in it and keep it aside
Now add ½ tsp mustard seeds and few kadi patta in the same oil
Add ¼ cup of Chopped Onions, 1 tsp Urad dal and 1 tsp channa dal and sauté them well
Now add ¼ cup of blanched mixed vegetables and sauté well
On this add 3 cups of water and boil it well
Once water starts to boil add Salt, Sugar, chopped green chilli and chopped coriander leaves
Mix all well
Now add dry roasted Suji in it while constantly stirring the mix.
Add ghee to this and cover Upma with a lid for 2-3 min
Soft, tastiest, aromatic Upma is ready .. Enjoy

Poha

Clean 1 cup Poha thoroughly
Soak Poha in water for 1-2 min
Drain water from soaked poha completely in a strainer
In a kadai take some oil, fry 1 tbsp ground nut in it and keep it aside
Add 1 tsp Mustard seeds, 1 tsp jeera and 2 chopped onion in it. Sauté well
Add ½ tomato and salt and sauté it well
Now add blanched ½ cup peas & ½ tsp haldi powder , mix all well
Now switch off the gas and add soaked poha
Mix poha well with all masala
Switch on the gas on low flame and cover the kadai for poha to cook well for 5 min
Garnish poha with chopped 1 tbsp coriander leaves and fried ground nut
Plate this masala poha and garnish it with green chillies and pomegranate
Enjoy this quick hot poha with hot tea in your breakfast

CHCKEN KORMA- EASY AUTHENTIC RECIPE


Ingredients

Chicken- 500 gms

For Marinate
Ginger- Garlic – Green Chilli paste- 2 tbsp
Salt- 1 tsp
Red Chilli Powder- 1 tsp
Haldi- ½ tsp
Lemon Juice- 1 tbsp

For Korma
Onion- 2
Cashew- 2 tbsp
Green Cardamom – 4 no.
Black Cardamom – 1 no.
Javitri/Maze
Clove- 4-5 no.
Star Anis- 1 no.
Cinnamon- 1 inch
Tejpata/ Bay leaf- 2 no.
Red Chilli powder- 1 tsp
Haldi- ½ tsp
Dhaniya Powder- 2 tsp
Green Chilli- 2 no.
Curd- ¼ Cup
Chicken Masala- 1 tbsp
Kashmiri Lal Mirch- 1 tbsp
Kasuri Methi- 1 tsp

Method
• Clean Chicken thoroughly
• Marinate Chicken with Ginger Garlic green chilli paste, Salt, red chilli powder, Haldi, Lemon juice and keep it aside for 30 min
• Fry Onions and make a smooth paste
• Soak Cashews and grind them into smooth paste
• Take a pan, add cooking oil , Cinnamon , Javitri, black cardamom , green cardamom, cloves, star anis, tej patta
• Add Marinated chicken and fry it till chicken is 80% cooked
• Remove fried chicken from the pan
• In the same oil, add red chilli powder, haldi, dhaniya powder and Saute dry masala
• Add warm water into it and let it boil
• Add green chillies, ginger garlic paste, green cardamom, Dalchini, black cardamom, tej patta
• Add fried Chicken and let it cook for 10 min
• Whisk curd with kashmiri lal mirch & Chicken Masala and make a smooth paste
• Add this Curd paste to the chicken and mix well
• Let this cook for 5 min
• Add Onion and cashew paste and Kasoori Methi
• Mix well and cook it on low flame for 10 min
• Add Kewra essence and pinch of sugar for flavouring (optional)
• Stir well
• Chicken Korma is ready to be served with tandoori roti
