Wellness Greetings!

"Across time, we’ve always met at the table,” says Lao.

Don't really know who Lao was- or when he said this, yet do know that this still holds so solidly true.
For at the table- each of our dining tables, stories, recipes, legacies, memories and flavours, all gather together to culminate in a "taste" that goes beyond the ingredients in the dishes.

This "taste" at the THAC KITCHEN, has been carefully tended to from its very first no-oil-tadka experiments, in the hands of Dr Vijaya Venkat- THACs founder.
Putting theory to practise was the fire that furiously fuelled her very many experiments. Even the flop disasters were khichdi-fied or cutlet-ed into tasty morsels. Bite by bite, camouflaged dishes by showy-presentations, she won her family and friends over with her kitchen innovations.

"Making something out of nothing", was a gift she had...like an Akshaya Patra which magically kept feeding all - and there were many many strangers friends and foes who were won over by the kind of food she made. Different, unique with an undeniably wholesome taste.

Which is what we can call as the THAC CUISINE.
Today- decades down from that little kitchen in Dr Venkat's home- the very same recipes, the kind of ingredients used, the methodology, why even some of the pots, pans and vessels in the current far more -modernised kitchen, all coalesce to create the Menus you eat, 5 days of the week at least.
For some of you, this kind of "cooking" has become an everyday thing - thanks to the principles and concepts she laid down, almost 40 years ago.

So when a box is opened, be it for Lunch or a Snack, it's like each of you are sitting together and meeting across a table, (albeit an invisible one!), with Dr Venkat sitting at its head- sharing and tasting a meal, together.

To us, that's the tastiest kind of meeting/eating -ever!

3 SESSION WORKSHOP aims to do!
To equip your KITCHEN STAFF to make a big variety of dishes to fulfill all your cravings.

THACs TRAINING COOKS WORKSHOP provides a platform, to do just this.

To train and equip your kitchen staff (or those who make your daily food), with 3 inter-connected sessions.
The Workshop will teach them to make food correctly, keeping the nutrient quotient high.
Kitchen Management Principles are its foundation.
Nutrition Concepts which you are unable to get them to understand, are explained here with their practical applications.
Correct Methodology is what gets reiterated and demonstrated here, to enable your cook to prepare your meals.

Sept 1st 1989 to 2025 - decades have rolled on, growing firmly on the very first foundation stone laid then.
That foundation stone was the THAC Kitchen. Started then to make available to all - fresh, natural, whole, untampered and tasty food, through a daily lunch service.

The forms of the service have changed through the years, the hands that make it though- have pretty much stayed the same. As has the methodology, truthful to the blueprint that it emerged from. Which is to provide Nourishment in its truest most faithful form.

Its founder- creator Dr Vijaya Venkat started first with little experiments on herself and her family in her own kitchen. From there on to sharing with family and friends, and eventually in the shape of the THAC KITCHEN itself..

The Menus for these 2 weeks in particular are a tribute and in remembrance of some of Dr Vijaya Venkat's unique food hacks, favourite foods and well tested recipes.

Enjoy them all as we the hands and hearts that run the THAC Kitchen, offer them in gratitude for all the support that we have received.

Even in the thundering rains and flooding, he is carried to mandaps and private homes with pomp and grandeur.
He is so very adored, worshipped, and definitely prayed to, at the start of any venture, or occasion.
He symbolises what we all aspire for - good luck and prosperity.
He shows us that life can be tamed too- despite life's at times pesky nature, through the symbol of his vehicle (vahan) - the rat.

THAC AUGUST END KITCHEN ANNOUNCEMENT

Wellness Greetings!

When we sit to eat with plate in hand, generally the first serving occupying more than 50-60% of the plate - is the Main Cereal/Grain dish.

Be It Rice..as Pulao or Risotto or Biryani or Masala Baat where the grain can hold and keep its form and shape. Based on where we have grown up or local state we are coming from, the varieties of Rice are innumerable. Each variety has its own flavour size and stickiness. Along with the all important taste profile of course.

Rice however can be ground as flour or batter to turn into all kinds of shapes and forms. As Sevai, as Pancakes or Dosas, as Noodles as Bhakris, as Momos or that sweet Modak outer covering.

The same is true of all other Grains and Millets.

The Main Dish, based on the Grain used then takes on an identity, a name and personality that dominates the setting on the table and your plate.

The Main Dish also somehow "demands" its own accompaniment, more like a companion on the gustatory journey you are about to embark on.
So Bhakri & Amti pair up like Dosas & Sambhar go together, just as a Pulao begs for a Curry or a Gravy like Dahi Kadhi to be mixed and eaten together.

What about the Sides then...for they are even annoited as such - A Side!
What about the equally important and necessary Vegetables, the Tubrers & Roots the Koshimbir and Salads?
The Snacks that make up the whole meal?
Is enough attention given to them?
Is there place on your thaali for them?
Are the proportion in which your Sides & Main eaten, equal or favouring the Main?

IT'S THE LITTLE THINGS THAT MATTER!
AUGUST THAC KITCHEN ANNOUNCEMENT

When it comes to food and eating, often it's the first sight, the immediate flirtatious aromas that compels us to go on and taste it. And yet that tiny herb or the dash of spice, the topping of garnish, or that perfectly browned baked finish, is what has drawn us to the dish in the first place.
It's the little-est of things that matter, when it comes to Food. And paying attention to these tiny flourishes and all those many tinier details that goes into its making, come together to create all the difference.

So what's your opinion on food, flavour and cooking in general?
Whether you are a novice in the kitchen or a well seasoned and marinated chef in your own kitchen, here are some timeless tiny tips to dip into.

* When it comes to Vegetables- Do not overcook Veggies. Keeping them tender means retaining their colour profile, so that the Spinach stays green and not brown! As green as the monsoon cover out now.

Veggies need to stay crisp, not mushy. Over cooked veggies lose their all important enzymes & nutrients..so keep them crisp and tender, by steaming them...not pressure cooking nor boiling them.

* Add Salt at the end, so that the veggies do not lose their natural moisture. Colour also gets retained when salt is not added earlier.
* Tear your Herbs by hand, instead of cutting them with a knife. This helps to preserve their original essential oils and flavours..their aromatic qualities get preserved...this is what draws a person to the dish.
* Your Knife is your biggest ally, tool and friend in the kitchen. As is your cutting board. Invest in the best for both. It makes all the difference in the ease of preparation and the styles of cutting you can play with. The same veggie cut differently can conjure truly different textures and flavours.
* Last yet never ever the least- and in fact is the key starting point to the collection of little things- is where you shop and pick up your supplies. How fresh ripe and seasonal it is. Whether it was grown organically? Where it was sourced from? How far has it travelled? All these factors come together to give each ingredient its unique taste and profile.

At the THAC KITCHEN, it is these details, these tiny little things that have become the take off point for what we do in the kitchen.

For our women staff who have been working with us for decades, they each have their own "tool', their preferred peeler, knife, chopping board or strainer that they call their own. Like an old fashioned ink pen, which has a signature slant or style via its nib, each woman's tool is their signing off with a dish, and what they bring to it.

Taste this difference, in the upcoming Menus for the first 2 weeks of August.

We’ve been taught to fight fat - burn it, lose it, restrict it, fear it.
But what if fat isn’t the enemy?
What if fat is actually your body’s way of protecting you?

That weight around your belly, thighs, or arms?
It’s not just stored calories.

What really do these stages mean? What do the names do to us from within?
