This is how I make Monday not ruin my life 🤝
If you want to have a good week, you have to plan for a good week and for me that looks like meal short-cutting (I got this idea from one of my favourite creators !!)
I don’t do full meal prep (it grosses me out lol), but I LOVE prepping a few staples that make my life easier and support my health
This week’s shortcuts:
Egg Bites 🥚
Any veggies you want
8 eggs
Cheddar cheese
Salt & pepper
Splash of milk
Chop all your veggies (I used red pepper and broccoli), add them to a bowl with 8 eggs, a little bit of grated cheese, salt, pepper, a splash of milk, and whisk until well combined. Bake at 350° for around 20 minutes.
Ginger shots 🫚
Chop up a big root of ginger, add to a blender with some water (just enough to make sure it blends well), and strain using a cheese cloth, sieve, or anything else (I use my )
I store some in a jar to leave in the fridge, and some in an ice cube tray to use later! I also freeze the pulp in an ice cube tray to add to broth, stir fries, smoothies, etc.
Cut Veggies 🥕
I literally just cut up celery and carrots and store in water, I change the water every couple of days! That way I have fresh and clean veggies ready to snack on!
Black sesame paste 🥄
1 bag of black sesame seeds
1bsp of honey (optional)
Rinse the black sesame seeds and let them air dry (if you do not let them dry, they will turn bitter when toasted!). Once dry, toast them for a few minutes on low, and then add to a food processor and blend until a paste forms. Add 1 tbsp of honey and blend to combine.
You can either use the paste to make black sesame lattes, add on a yogurt bowl or oatmeal, etc. but I just eat 2 tbsp every day!
