Gathering nettles and 3 cornered leek to make some delicious pesto to accompany wild sorrel scones, nettle fritters and a sourdough miso flatbread, to be shared with folks at a NatureWell event on Thursday.

Many years ago I started out in hospitality working in a silver-service restaurant and then on to a private catering & events company in London. Now, those skills and experience are serving me well - reclaiming a part of my life, but infusing it with my deep nature connection, and love of wild botanicals to share nature’s diversity and capacity to heal our gut microbiome and reignite connection with the earth.

I adapted an warm chicken salad for supper this evening, having baked a sourdough miso flatbread and Sun-dried tomato focaccia this morning. The miso from the awesome I ground up spices last night to make up a schwarma blend to add to the miso flatbread as per the recipe in ‘The Sourdough School The Ground-Breaking Guide to Making Gut-Friendly Bread.’ I added some dukkha to the salad that I’d made up last weekend, as well as some fresh figs.

encourages us to try sequenced and symbiotic eating, the former being a way to support blood sugar levels and the latter, feeding the gut microbiome.

A delicious supper!

A day of grounding, mindful activity in the kitchen, baking and cooking, alongside some writing tasks.

Just a reminder that I'm guiding a Foraging & Forest Bathing wander this Saturday morning in Egypte woods, from 10am to 12.30pm.

A chance to slow down, ground and enjoy these relics of the ancient Celtic rainforests here in Jersey. Out on the north coast, with fabulous views across the Channel, and our beautiful coastline.

I'll be sharing invitations designed to rest your mind and body, to breathe with the trees. This purposeful action leads to numerous health benefits, immediately calming your nervous system, helping to regulate, and settle any anxiety, uplifting mood at the same time.

Foraging for wild herbs is also on the agenda - for teas and wild edibles.

It was such a pleasure to chat about the beauty of herbs and plant medicine, wild foods, sourdough and regenerative agriculture.

Talking health and wellbeing from the ground up, healthy soil microbiome means a healthy gut microbiome.

She also established Culpepper House in Baker street to promote herbalism. Offering an alternative to what has become known as conventional medicine.

A little wander to gather some daisies for a balm gifted me with some magical moments at a nearby ancient stone dolmen. I’ve always been attracted to rocks and stones! I collect little ones out and about, and often rely on them to slow me down, take some time to reflect, and dream. Imagine how many stories they hold?stone.club

The hawthorn, traditional May blossom, had burst into flower, the sun warming the air with its scent.

I found a baking book ‘Dough’ by Richard Bertinet in and immediately tried a recipe, adapting it to go along with the new sourdough long fermentation processes I’m learning from I used an organic wholemeal and spelt blend, however it didn’t quite work, rather flat, however nice texture and tastes good, with hints of lavender and honey, all adding to the diversity of goodness in the bread.

A quick visit to the site of a new project the next day blessed me with the sight of beautiful sakura, cherry blossom, on a grey day.

I’m counting down the days now until I set up my first stall at the Trading Point this Saturday in the Farmers and Makers Spring Market.

This heralds in a new era for me, one that I have dreamed about since I was a teenager!

I’ll be sharing just a few of the herbal remedies and wild foods that I have been experimenting with for some time now. All are wildlife friendly, sustainably sourced, with some homegrown herbs, grown by the biodynamic calendar; infused oils are usually prepared by the sun or lunar methods too. I’ll have some trial sizes of balms, and medicinal tea blends.

Great to see the NatureWell approach being adapted for an event in Grève de Lecq this morning, a collaboration between and CAMHS Jersey.

Families were asked to bring some mystical creatures they had created into the woods, and find special places for them, and then share stories about the places within the group. Some really great stories were revealed, with the creatures returned to the Seaside cafe at the end of the session in the woods.

I really enjoyed observing how aspects of the NatureWell programme may be shared within art-focused community events.

Yesterday, late afternoon, away from the screen and research for a few hours, lapping up the sunshine and salty air at a favourite spot, Le Pulec, aka Stinky bay, St. Ouen Jersey.

The rocks at Le Pulec have a special quality, and I fully embraced them, scrambling up a narrow passage to clamber over to the seaward side where I tucked myself into a sheltered grassy knoll.

From there I had a fab view of the Pinacle, and the waves breaking over the reef. Just 4 surfers out, which was soon down to 3, 2 surfing together and the lone surfer, my son.

It was so good to see him having fun out there, making up for lost time in the waves. 🌊 Nature now’s best. .
