Soup, it would be amiss of me not to.

My sister makes an amazing butternut squash soup, but I'm going to play with it, just a little and you feel free to play with it too. It's so quick and easy you could make a large batch and freeze.

1 whole butternut squash - peeled and seeds removed
1 whole onion
3 cloves of garlic
2 roasted yellow peppers
1 chilli (optional)
Turmeric
Smoked Paprika
Black pepper
Salt
Cumin

Place all the ingredients into a large saucepan with enough water to cover and simmer until everything is soft, taste to see if you need to add more seasoning.
Remove half of the liquid and keep.
With a hand blender or a standing blender, blend until smooth, if too thick add some of the liquid removed, until it achieves the consistency that you like.
Reheat and serve with a drizzle of olive oil, and a good wedge of sour dough bread.

The best meal of the day ~ Breakfast, this is not my recipe, but I could eat it every day

Creamy Mushrooms on Toast

1 onion chopped; 1tbs Rapeseed Oil; 400g of mushrooms; 2 cloves of garlic, crushed; half tsp salt; 1 tsp smoked paprika; half tsp paprika 100ml soya cream; 1 tsp English mustard (or any mustard you like); fresh parsley and dill and a little pepper to taste. Serve on Sourdough bread

Fry onions in oil, then add mushrooms, garlic, salt, both paprika's and cook until soft. Remove from heat and add the cream, mustard and chopped herbs. Season to taste. Toast the bread and pile the mushrooms on.

Veganuary can be a little difficult, especially if this is your first time venturing into the vegan diet.

This recipe isn't mine, but it is one of my lunch time favourites, I can prepare it in the morning while I'm getting ready for work and it is enough for 2 days.

1 cup of red lentils
2 handfuls of fresh spinach or 2 cubes of frozen
2 handfuls of cherry tomatoes
1 stock cube or 1 cup of stock
season to taste - I use smoked paprika and garlic, you can use curry powder

Method
Add everything to a saucepans with 2 cups of water (if you have used 1 cup of stock) use 1 cup of cold water.
Simmer on a low heat for 20 minutes, if it starts to dry out I use a little stock to stop it from sticking.
Once cooked turn off and leave it will thicken

You can eat it on its own or add steamed or roasted vegetables or a little rice or salad

Try not to use processed foods or reduce the amount of processed foods. Vegan food that is processed can still be high in salt, fat and preservatives.
