Soup, it would be amiss of me not to.
My sister makes an amazing butternut squash soup, but I'm going to play with it, just a little and you feel free to play with it too. It's so quick and easy you could make a large batch and freeze.
1 whole butternut squash - peeled and seeds removed
1 whole onion
3 cloves of garlic
2 roasted yellow peppers
1 chilli (optional)
Turmeric
Smoked Paprika
Black pepper
Salt
Cumin
Place all the ingredients into a large saucepan with enough water to cover and simmer until everything is soft, taste to see if you need to add more seasoning.
Remove half of the liquid and keep.
With a hand blender or a standing blender, blend until smooth, if too thick add some of the liquid removed, until it achieves the consistency that you like.
Reheat and serve with a drizzle of olive oil, and a good wedge of sour dough bread.
