🌱 For the Pesto:
2 cups fresh basil leaves, packed
1/2 cup grated Parmesan cheese
1/2 cup pine nuts or walnuts
3 cloves garlic
1/2 cup extra virgin olive oil
Salt and pepper to taste
🍝 For the Pasta:
12 ounces (340g) pasta (spaghetti or penne)
Salt for boiling water
🍅 Optional Toppings:
Cherry tomatoes, halved
Grated Parmesan cheese
Fresh basil leaves for garnish
👨🍳 Instructions:
1- Prepare the Pesto: In a food processor, blend basil, Parmesan, nuts, and garlic until coarsely chopped.
2- Stream in Olive Oil: While the processor runs, add olive oil in a steady stream until the pesto is
smooth. Scrape down the sides as needed.
3- Season and Set Aside: Season the pesto with salt and pepper, then set it aside.
4- Cook the Pasta: Boil pasta as per package instructions until al dente. Reserve 1/2 cup of pasta water.
5- Toss the Pasta with Pesto: In a large bowl, toss cooked pasta with pesto until evenly coated. Add reserved pasta water to adjust the sauce consistency.
6- Serve: Plate the pesto pasta. Garnish with cherry tomatoes, Parmesan, and fresh basil leaves if desired.
