🫠Learn how to prepare your light version of the classic Melanzane dish!

▫️Preparation:
- Preheat oven. Cut the eggplant into disks
- Place on the baking sheet and brush both sides with oil. Lightly salt and pepper eggplant rounds.
-Broil them on the top rack of the oven until eggplant is medium golden-brown, 3 to 4 minutes.
- Turn eggplant pieces over and broil on the other side until browned, 3 to 4 minutes more.
- Slice the tomato horizontally into thick rounds.
Slice the cheese into very thin slices.
- To assemble, top each eggplant round with 2 or 3 basil leaves, then a tomato slice, followed by a slice of mozzarella.
- Add a long toothpick at the center of each stack and bake on the middle rack until mozzarella is melted and just beginning to turn brown.

▫️Kale is very high in nutrients and very low in calories, making it one of the most nutrient-dense foods on the planet.

- 3 cups of thinly sliced white cabbage + red cabbage.
- 2 thinly sliced carrots.
- 1/2 thinly sliced red pepper.
- 1/2 thinly sliced yellow pepper.
- 4 chopped scallions.
- 1/2 cup cilantro.
- crushed roasted peanuts for garnish.

🔺Dressing:

- 3 tablespoons peanut butter.
- 1 tablespoon white vinegar.
- 2 tablespoons lemon juice.
- 2 tablespoons honey.
- 1 teaspoon sesame oil.
- 4 tablespoons water.
- 1 minced garlic clove.
- 1 teaspoon minced ginger.
- 1/4 teaspoon chili flakes.
- Salt to taste.
