Pumpkin Souffle recipe
🎃 What’s not to love about this Pumpkin soufflé with spinach?!

Ingredients:
🔸12cups of pumpkin (1,8kg) = 6cups of pumpkin purée (900g)
🔸2cups of onions (200g)
🔸4cups of spinach (400g)
🔸1/2 cup of bulgur (100g)
🔸2 Tbsp cooked chickpeas (40g)
🔸1tsp sumac (10g)
🔸3 Tbsp oats (50g)
🔸1tsp olive oil (5g)
🔸1 Tbsp lemon juice (10g)
🔸Pinch of salt
🔸Pinch of black pepper
Instructions:
🔶Make the pumpkin purée
🔶Soak Bulgur in water then add it to the pumpkin puree and mix
🔶In a saucepan, sautee onion, spinach, chickpeas, lemon juice, olive oil, sumac, salt and black pepper
🔶Place a butter paper in the bottom of a baking pan, place first layer of pumpkin (1/2 quantity)
🔶Add the sautéed mix then spread it
🔶Add the second layer of pumpkin. Top with oats.
🔶Bake it in the oven for 15 minutes at 180C
Makes 4 servings.
