Instructions:
1-In a large pot, sauté the chopped onion and minced garlic until fragrant.
2-Add the butternut squash, carrots, and Brussels sprouts to the pot. Stir and cook for 5 minutes.
3-Pour in the vegetable broth and bring the mixture to a simmer.
4-Season with thyme, salt, and pepper to taste. Allow the soup to simmer for 15-20 minutes or until the vegetables are tender.
5-Add the chopped kale in the last 5 minutes of cooking, allowing it to wilt into the soup.
6-Taste and adjust the seasonings if needed.
Serve this nourishing soup hot, and feel free to customize it with your favorite herbs and spices.
