Kithul cultivation is a risky, high investment proposition that takes time to yield returns. And Kithul tapping/collecting sap (තෙලිජ්ජ) is not an easy job it self - Just imagine climbing a 40-foot-tall tree up and down along a wooden lattice twice a day!

After sap is collected over several days, it will be boiled down over an open wood fire until it reduces to a sticky and intensely sweet syrup. Making jaggery takes extra time and effort.

All in all there’s a lots of effort that goes it to each bottle of Kithul treacle or slab of Kithul jaggery you consume. So hats off to all the masterful tappers, the real magicians behind the golden syrup of Sri Lanka! 👏 👏
