This is the season of zucchini overload. But did you know that this blend vegetable is actually packed with nutrients and grows in the time when we need it a lot? Yes, it is very full of good stuff like fiber that is needed for our digestive system,
vitamin B6, riboflavin, folate, vitamin C, vitamin K, manganese, potassium and water. This wonderful vegetable is perfect to replenish us with the nutrients we loose in hot and sweaty time.
Add it in your smoothies, fritatas, pasta, bread. Make tasty zucchini cakes, chips, lassagna, and zoodles. Even salad with zucchini will be good.
