Those little fuzzy gulls that I posted the other day are of course edible. They are linden seeds. They are known as substitute for chocolate. While I have never done it before, I tried them this time. You roast them, ground them, and sift. And then mix with some fat like coconut oil or butter, sweetner like honey or maple syrup. And that's it.
I will be honest, it is grainier and has more nutty and mocha taste. Some people use it more like coffee substitute. So my conclusion - it is not like real chocolate but it resembles nuttier chocolate taste. And we think it is a delicious snack if you do not mind grainy texture.

Our next fermenting workshop is almost here. We will make fermented cucumbers and I will share the recipe that we have been using from generation to generation, and each of you will take home a jar of your own made cucumbers.

Finally I made some fermented cucumbers. They will take couple of days to ferment but I am so excited to have them. Fermented cucumbers are my favorites in summer days. And best of all I am using the recipe that comes from generation to generation, that means it is the taste of childhood.

Last day of our Herbalism for Kids class. Today it was plantain leaf and each kid took home plantain leaf syrup for cough.
They learned about plantain leaves and harvested them with other plants to add to their syrup and made their own syrup. It was so great to see how kids did their work and got to their end result. Another tasty and beneficial remedy made just from the plant they can find in their backyard.
Thank you everyone who brought the kids and thank you kids for learning hard. I enjoyed the time with you all.

This is the season of zucchini overload. But did you know that this blend vegetable is actually packed with nutrients and grows in the time when we need it a lot? Yes, it is very full of good stuff like fiber that is needed for our digestive system,
vitamin B6, riboflavin, folate, vitamin C, vitamin K, manganese, potassium and water. This wonderful vegetable is perfect to replenish us with the nutrients we loose in hot and sweaty time.
Add it in your smoothies, fritatas, pasta, bread. Make tasty zucchini cakes, chips, lassagna, and zoodles. Even salad with zucchini will be good.

Lets share our favorite zucchini recipes in comments to give more ideas to all of us for the ways to use it.
One of our favorites is zucchini chocolate bread. I left the recipe in comments.

Another Herbalism for Kids class. This time - lemon balm. Again we started our learning in the garden. Smelled, observed, and harvested lemon balm. Then we looked and recognized at other plants. And serched for caterpillars and cocoons. After that followed refreshing cold lemon balm tea and we filled our materia medicas. And then finally learned another medicine making skill- lemon balm infused honey. I am sure this delicious honey will be very loved recipe.

Next is pur last meeting time. And it will be about plantain leaf and plantain syrup for cough. Perfect for the coming cold time in the fall.

Some more pictures from Milk Kefir Workshop.
I hope your grains are fermenting and you are getting some nice fermented dairy.

Just last weekend I read more about milk kefir and its benefits again.
Vitamin B and C amount increases during the fermentation process.
Research shows that regular kefir consumtion lowers cholestorol and protects against bone loss. It also may help with inflamation in the body.
There is a lot of beneficial bacteria that helps our digestion system.
It helps to improve immune system.

Why not to add this wonderful food into our diets?
