Autumn and winter are generous seasons.
Fruits are ripe, heavy on the branches, asking to be used.
One quince tree can offer more than our whole community can eat fresh before time steps in.
So we cook, we transform, we preserve.
This is quince gelée, slowly made, gently dried, turning an abundant harvest into a sweet, simple snack that will last beyond the season.
Eating is one way of honouring a tree.
Saving its fruits for later is another.
