Nirusha Pahladi is an Accredited Registered Associate Nutritionist from the Association of Nutrition (AfN) in the UK. She has previously gained international work experience in Singapore as a nutritionist consultant in both clinical setting and food industry. She is now currently a practicing nutritionist in Mauritius and her aims, professionalisms and experiences are to help people to maintain a healthy lifestyle and achieve their life goals. Milk and dairy is important in a healthy balanced diet, providing many nutrients essential for good health at all age.

Milk and dairy typically provide almost one third of our recommended calcium intakes but the nutrition provided by dairy products goes way beyond calcium alone. A single glass of semi-skimmed milk provides protein, phosphorus, potassium, iodine, riboflavin and pantothenic acid and largely about 72 per cent of our daily needs for vitamin B12. The main dietary source of B12 for vegetarians is dairy.

Together, the nutrients in milk and dairy help to:

*Keep muscles, bones, nerves, teeth, skin and vision healthy
*Release energy from foods and reduce tiredness and fatigue

Homemade Cauliflower rice 👩🏻‍🌾 - How to do it at home?

Here are two techniques for making cauliflower rice. You can either firstly use a box grater as traditionally used for cheese, or secondly, with a help of a food processor. With both techniques you’re aiming for little pieces the size of rice.

🌟 Final step, it is important to press any excess moisture from the rice by transferring the cauliflower rice to a large paper towel or absorbent dish towel and squeeze/press to remove any remaining water. This ensures no excess moisture remains, which can make your dish soggy 😊

✅Best part we have it frozen in supermarkets around Mauritius as well 🫶🏼

Cauliflower rice can be incorporated as Stir fried, Pizza base crust, sushi, rice-bowl or in soups
