A tremendous perk for the writer is being able to enjoy food and juice - what a tremendous blessing.

The delicacy under the green sauce are chard tacos. There are finely chopped persimmons and zucchini wrapped in chard - deliciousness! The green sauce itself is made either spinach, garlic, apple cider vinegar and a little cooked potato to thicken the sauce (helpful hint).

The cauliflower has a carrot crème (sans cream).
*
The potatoes are fluffy clouds since a potato ricer was used to create them.
*
Green salad, Hippo soup, Pau d’arco tea, carrot juice are yummy as well. These should never be taken for granted as they are imperative to the meals.

Oh and there’s dessert too. Plantains cooked slowly so that their natural sweetness shines through. Bon appetite or as we say in Mexico - buen provecho 🥰

Today’s nourishing platter features acorn squash, potato croquettes, slow-cooked broccoli, and a fresh green salad with mandarin wedges and red onion. For dessert, we served stewed plums — simple, healing, and delicious.

Fruit crêpe with mango and plum coulis:

Ingredients for crêpes:
•8oz quinoa
•4oz rolled oats
•3oz organic brown sugar

Soak quinoa for three hours. Rinse then blend along with oats and sugar. Add cold water to blender. Mixture should be liquid.

Heat a stainless steel pan and serve a hefty amount to cover surface. Be gentle when flipping as there is no oil/butter to help this from sticking. You can add chopped fruit like peaches or bananas and fold.

Fruit coulis:
•3 cooked plums
•1 mango

Blend fruit and serve over crêpes.

Lunch was extra special today at Health Institute de Tijuana! 🌮 Our kitchen team prepared delicious nopales tacos using rolled-oat tortillas, paired with quinoa with onions, zucchini sautéed with garlic, and potatoes topped with our signature house gravy.

Today’s healing platter is a beautiful reminder that food is medicine. We served purple cabbage with raisins, steamed broccoli, a colourful veggie salad, and tender fingerling potatoes. Alongside the plate: a cup of pau d’arco tea, 8oz of fresh green juice, and a comforting bowl of Hippocrates soup. And for dessert — baked bananas gently infused with orange juice.

Today’s beautiful lunch plate features a vibrant green salad with mandarins, parsley, red onion, and our signature apple cider vinegar + flax oil dressing. Alongside it, we served tender cooked beets and a colorful mix of bell peppers simmered in fresh orange juice and garlic.

Instead of a potato, today’s menu included a perfectly baked sweet yam — warm, nourishing, and full of natural sweetness. This plate was also accompanied by Hippocrates soup, 8oz of fresh carrot juice, and a cup of pau d’arco tea.

Remember: your food is medicine — every bite is nourishing you and supporting your healing.

El plato del almuerzo de hoy incluye una fresca ensalada verde con mandarinas, perejil, cebolla morada y nuestro aderezo especial de vinagre de manzana con aceite de linaza. A un lado servimos betabel cocido y una mezcla de pimientos cocinados en jugo de naranja y ajo — llenos de color y sabor natural.

What we do and who we are...

Our diet is plant-based and naturally high in vitamins, minerals, enzymes, and micro-nutrients. Rather than treating only the symptoms of a particular disease we will treat the causes of most degenerative diseases: toxicity and nutritional deficiency. With a whole-body approach to healing, the body will reactivate its magnificent ability to heal itself.

We do not proclaim or guarantee that any approach, conventional or alternative, will reverse every case with a cure.

However, our physicians have been trained by the Gerson Institute and we feel you would be in the most qualified hands to help you on your road to good health. We are the only medical facility in the Americas licensed by the Gerson Institute.
