Recipe: Serves 4
Requires air fryer
Ingredients:
1 tbsp Red Island Extra Virgin Olive Oil
2 fresh corn cobs, quartered lengthwise
1 tbsp smoked paprika
Pinch of salt & pepper
Pinch of dried thyme
Lime & Chilli Dressing:
3 tbsp Red Island Extra Virgin Olive Oil
Β½ red onion, finely diced
Β½ red chilli, finely chopped
Juice of Β½ lime
Salt & pepper, to taste
Handful of fresh parsley and basil, chopped
Method:
Preheat your air fryer to 200Β°C. Place the quartered corn cobs in a mixing bowl. Drizzle with 1 tbsp EVOO, then sprinkle with smoked paprika, salt, pepper, and thyme. Toss to coat. Arrange the corn ribs in the air fryer basket and cook for 15 minutes, flipping halfway through, until golden and crispy. Combine diced onion, chilli, lime juice, parsley, and basil in a small bowl. Season with salt and pepper, drizzle with 3 tbsp EVOO, and mix well. Drizzle the dressing over the hot corn ribs and enjoy immediately!
