From its humble origins in the rainforest, pansuh has grown into a dish that unites people. Today, it is now a cultural treasure, a centrepiece for festive seasons, family gatherings, and celebrations across Sarawak.

In recent years, pansuh has become an anchor of Sarawak’s food tourism. Restaurants and hotels proudly feature it on their menus, while international trade and tourism fairs showcase it as a symbol of our proud culinary heritage. The Story of Pansuh - Part 2
~Cooking with Bamboo~
For Sarawakians, pansuh is more than a dish. It is a method of cooking rooted in tradition. The Kayan call it lahok, the Iban say pansuh, while the Bidayuh know it as darum bu-uruk, which means “in the bamboo.”

This practice began long ago, when hunters and foragers ventured deep into the rainforest carrying only the bare essentials. With no pots, pans, or stored ingredients, they turned to what nature provided in abundance: plants that grew wild, fish that swam freely in the rivers, and animals that roamed the jungle. Cooking inside bamboo over fire became both a survival method and a way to transform these fresh ingredients into a nourishing meal.

Over time, this practice returned to the villages, was passed down through generations, and eventually found its place in our modern kitchens, becoming part of Sarawak’s celebrations and festive seasons.

What began as necessity has endured as heritage. At Lepau, we honour this ingenuity by keeping the bamboo flame alive, serving pansuh the way it was meant to be experienced - simple, authentic, and deeply Sarawakian.

Among Sarawak’s culinary treasures, few dishes capture the imagination quite like pansuh chicken. In recent years, this bamboo-cooked delicacy has gained tremendous popularity among both locals and curious travelers. Today, it is celebrated as one of Sarawak’s must-try experiences. Its delicate, earthy flavours are widely loved, yet the story behind them remains less known.

Pansuh is not the heritage of a single community… it is a truly Sarawakian dish, a shared culinary tradition of the Orang Ulu, Iban, and Bidayuh peoples. Its origins lie not in kitchens but deep within the rainforest, born of necessity when survival inspired ingenuity. In a land where bamboo grew in abundance, cooking with it over fire transformed simple ingredients into a dish that was aromatic, nourishing, and unforgettable.

At Lepau, we continue this legacy by preserving the traditional method while using authentic ingredients. Every serving of pansuh is more than a meal - it is a story told through flavours, a reminder of Sarawak’s resourceful past, and a celebration of the traditions and cultures that continue to shape its identity.

Our Story

In January 2014, Lepau was founded on the love of Sarawak tradition and culture. Inspired by the colourful flavours found in traditional Sarawak cooking, two Kayan ladies joined forces to establish a team of food enthusiast who are eager to showcase to the world the uniqueness of the local Sarawak food.

The name “Lepau” was inspired by the Kayan word that means “farm-hut”. It was built to resemble a wooden hut and decorated with traditional Kayan handicrafts to recreate a kampong ambience.

Driven by their immense passion to promote and preserve the fading food tradition of their people, the team compiled and reinvented recipes from the Kayan community as well as from the various ethnic communities found in Sarawak. From a small secluded “farm-hut” in the centre of Kuching city, Lepau has evolved into a well-known local brand frequented by visitors from all around the world who are curious and interested to have a taste of real Sarawak dining experience.

In February 2018, Lepau was honoured and humbled to be awarded the Best Innovative Ethnic Restaurant Awards during the 20th Malaysia Tourism Award.
