โจ๐ฅ๐ Quinoa Chicken Salad ๐๐ฅโจ
Llight, refreshing, and high in protein ๐ช Perfect for a quick lunch, meal prep, or a wholesome dinner bowl!
๐ฉโ๐ณ Ingredients (2 servings):
85g Tresor Wholly 100% Organic Tri-Colour Quinoa (or any convenient brand)
200g lean chicken breast, raw
1 cup cucumber, diced
1 cup red bell pepper, diced
1 red onion, diced
1 tbsp olive oil
1-2 tbsp lemon juice
1 tbsp balsamic vinegar
1 clove garlic, finely chopped
Paprika powder & parsley leaves โ for taste
Tresor super iodised salt โ for taste (or any convenient brand)
๐ฅ Steps:
1๏ธโฃ Slice chicken into strips, season with paprika & salt, marinate 5 mins.
2๏ธโฃ Rinse quinoa, place in a microwave-safe bowl with 1:2 ratio of quinoa to water, cover loosely, and cook on medium high for 6 minutes. Stir, then continue for another 4 minutes, may add water if needed. Let rest for 5 minutes or until water is fully absorbed. Fluff with a fork.
3๏ธโฃ Place chicken with 1-2 tbsp water in a microwave-safe bowl, cover loosely, and cook on medium high for 3-5 minutes or check during intervals to ensure chicken is fully cooked. Set aside.
4๏ธโฃ Combine olive oil, lemon juice, balsamic vinegar, minced garlic and salt in a small bowl, mix well.
5๏ธโฃ In a large bowl, combine cooked quinoa, cucumber, bell pepper, onion, parsley, and chicken. Pour in dressing, toss gently.
6๏ธโฃ Serve warm or chill 30 mins for a cold salad.
