𝐄𝐆𝐆𝐋𝐄𝐒𝐒 π‚π‘πˆπ’ππ˜ π€π‹πŒπŽππƒ π“π”πˆπ‹π„π’

INGREDIENTS
-80 ml nut milk I use soy milk
-40 ml oil
-50 gr granulated sugar
-β…› tsp salt
-60 gr all-purpose flour
-100 gr sliced almond or known as almond flakes in Asia

INSTRUCTIONS

Prepare the batter:
1. Whisk soy milk, oil, sugar, and salt in a large mixing bowl until sugar dissolves. Sift in the flour. Use a whisk to combine and break up any lumps. The batter should be smooth. Strain if necessary to get rid of lumps

Shaping and baking (if you plan to make the curve tile shape):
1. Preheat oven to 350 F (180 C) for a conventional oven. For a convection oven, preheat at 330 F (165 C). Line two large baking sheets with parchment paper. Prepare 3-4 round tall glass bottles or large rolling pin to drape the cookies over to shape them into a curve tile shape

2. Spoon about 1 tablespoon of the batter and spread it thinly on the parchment paper and use the back of the spoon to help you spread, about 3-4 inches in diameter. Sprinkle some sliced almonds on top. I recommend baking only 3-4 at a time so you have enough time to work with the cookies as they harden pretty quickly once they are out of the oven

3. Bake the cookies at the middle rack for 9-10 minutes (depending on the size and thickness) or until slightly golden brown on the edge. I suggest doing a trial baking by doing 2 cookies so you get the feel of it and the workflow

4. Remove from the oven and carefully lift the cookie up from the parchment using an offset spatula and drape the still-soft cookies on the glass bottle or rolling pin. You need to move fast to avoid cookies from hardening before you have the chance to bend them into shape. let them cool down completely. They will harden and crispy

Shaping and baking (if you plan to make the flat tile shape):
1. Preheat oven to 320 F (160 C) for a conventional oven. For a convection oven, preheat at 300 F (150 C). Line two large baking sheets with parchment paper.

2. Spoon about 1 tablespoon of the batter and spread it thinly on the parchment paper and use the back of the spoon to help you spread, about 3-4 inches in diameter. Give about 1-inch space in between cookies. Sprinkle some sliced almonds on top. I recommend baking one tray at a time

3. Bake the cookies at the middle rack for 15-18 minutes (depending on the size and thickness) or until slightly golden brown on the edge. Remove from the oven and let the cookies cool down on the pan. The cookies will crisp up as they cool down. If your tuile are chewy and soft, it's possible that your didn't spread the batter thin enough and/or they just need longer baking time. You can pop them back into the oven and bake for a few more minutes

Storage:
1. Almond tuile stays crispy in an air-tight container for 3-4 days. If it's really humid where you are, it may get soggy faster

2. Almond tuile freezes well when I tried doing that. They stay crispy too. Simply thaw at room temperature for a few minutes and they are ready for consumption

INGREDIENTS

For the dough:
-80 gr butter softened
-20 gr icing sugar
-90 gr all-purpose flour
-25 gr cornstarch
-1 Tbsp milk powder
-β…› tsp salt

For the filling:
-200 gr Nutella or more as needed

INSTRUCTIONS

1. Put Nutella in piping bag fitted with a nozzle of your choice. I use Wilton open star tip. Chill it in the fridge while you prepare the cookie dough

2. Preheat oven at 320 F (160 C) for a conventional oven. For a convection oven, lower the temperature by 20 degrees

Prepare the dough:
1. Combine the softened butter and icing sugar. You don't need a mixer. I just use a spatula to combine them. Add all-purpose flour, cornstarch, milk powder, and salt and combine until you get a soft dough

2. If it's really hot where you are and the dough feels sticky, you can flatten the dough and wrap with a cling wrap and chill in the fridge for 30 minutes

3. I don't have to chill the dough and work with it right away

If shape the dough using a cookie press:
1. I don't have the special cookie press, but if you do, you can pinch off about 10 grams of dough and roll into a smooth ball. Keep them covered

2. Lightly dust the cookie press with some cake flour to prevent sticking. Take one dough ball and use a cookie press to shape the cookies. Put the shaped dough on a baking sheet lined with parchment paper. Continue with the rest of the dough. Use a toothpick to poke few holes in the middle to help release some steam during baking

If shape the dough using a cookie cutter:
1. Lightly flour your work surface and rolling pin. Roll the dough out with a rolling pin to about 1/2 cm (5mm). Dip your cookie cutter in some cake flour and then press onto the dough to cut out the shape. Cut as close as possible so you don't have to gather the dough scrape and roll it out again too many times

2. Since I don't have the special cookie cutter, I just use whatever cookie cutter I have and then use the handle of a wooden spatula to make an indentation in the middle

3. Put the shaped dough on a baking sheet lined with parchment paper. Continue with the rest of the dough. Use a toothpick to poke a few holes in the middle to help release some steam during baking

1st round baking:
1. Put the baking sheet on the middle rack and bake for 10 minutes. The tart cookies are only half-baked at this point. Remove from the oven

2. Let the cookies cool down completely on the baking sheet. It is very important to let them cool down completely before you pipe the Nutella on top. The Nutella will melt and become messy if the cookies are still warm

Pipe the Nutella:
1. Once the cookies have cooled down completely, get the piping bag from the fridge and pipe the Nutella on top. The amount is up to you. Don't overdo it though

2nd round baking:
1. Lower the temperature to 300 F (150 C) for conventional oven and 20 degrees lower for convection oven. Put the baking sheet inside the oven again and bake for another 15 minutes or until the Nutella is "set" and dry to touch

Cooling:
1. Let them cool down on baking sheet for 5 minutes and then transfer to a cooling rack to let them cool down completely

Storing:
1. Once the cookies have cooled down completely, transfer to an air-tight cookie jar or container. They can be kept at room temperature for few weeks
