A strict fermentation process is needed to produce the microbes or microbial metabolites like probiotics, enzymes, bacteriocin and etc. Culture medium, temperature, pH, agitation speed, inoculum size, fermentation time, pressure, sterilisation, clean in place (CIP) and etc are the things to take into consideration. This is called 'Fermentation Technology'. Using the automated 150L bioreactor and 750L bioreactor, we can produce our desired microbial products via fermentation. Enterococcus faecium. E. faecium has long been recognised for its probiotic benefits and is widely used around the world. One of the major benefits of E. faecium is that it is uniquely suited to survive the digestive process and flourish in the gut. It promotes a balanced gut environment by competing for resources that harmful organisms would otherwise consume and use to grow. It also competes with harmful organisms for adhesion sites – areas on the surface of cells to which other cells and molecules can bind. Hence, this ‘multitasking’ strain is commonly found in human probiotic supplements.

Our Lactobacillus ferment filtrate is produced by Lactobacillus bulgaricus, which is a probiotic ingredient with antimicrobial activity, soothing and maybe anti-aging properties due to its content of bacteriocin, lactic acid, hyaluronic acid and etc. Production of L. bulgaricus in skimmed milk makes the ferment filtrate scented.

Bacteriocins are ribosomally synthesized antimicrobial peptides produced by various bacteria, including food-grade lactic acid bacteria.
Morphology of Listeria monocytogenes ATCC 7644 was observed under transmission electron microscope. Figure A represents L. monocytogenes without the treatment of bacteriocin. Figure B represents L. monocytogenes with treatment of bacteriocin derived from Lactobacillus brevis C23, in which the L. monocytogenes cell wall was disrupted. It shows the potential of this antimicrobial peptide to be used as bio-preservative in food industry.
