Stop tossing out the stems of your leafy vegetables like Ugu (fluted pumpkin), scent leaf, curry leaf, kale, spinach and many others. Yes, the leaves contain most of the nutrients, but have you also thought about the veggie's transport system "THE STEM?" 🤔

The stem is like the vegetable’s “highway,” carrying water, minerals, and plant compounds from the roots to the leaves, so it naturally stores some of those nutrients along the way.

Instead of throwing them away, wash well, then boil to extract their nutrients or cook them right into your meals.

In the picture above, I fried my curry leaf stems along with tomatoes until they wilted, and the flavor was amazing! 🔥

At a time where climate change, hunger and malnutrition remains persistent, it's important to create awareness on the power of our indigenous foods when effectively utilised.

Biodiversity remains at the forefront of protecting food systems and ensuring food security both in quantity and quality.

Every time we choose local foods, we protect biodiversity, nourish our bodies, and keep our traditions alive. Let’s stop abandoning what nourished generations before us for what only fills the belly but weakens the system that allow us grow and thrive.
