How to make Tiger nut juice.(Another recipe)

Ingredients:

πŸ”₯Tiger nuts (dry ones or fresh ) 4 cups

πŸ”₯Dates (Dibino) 10

πŸ”₯Coconut 1 medium size

πŸ”₯Ginger 1 piece

πŸ”₯Ripe Banana 4 pieces

Method:

1. Select and pick out the stones and other particles from the tiger nuts

2. Transfer into a bowl and soak with lukewarm water for about 6 hours or overnight

3. Once you're ready to grind the tiger nuts, wash it thoroughly for about 3 to 4 times

4. Break the coconut and slice into small sizes

5. Deseed the dates and soak for some minutes, and scrape the ginger

6. Transfer the washed tiger nuts to a bowl, add the slice coconut, dates, ginger and the peeled bananas.

7. Grind with a big engine or you can use your blender if it's durable

8. Filter with a cheese cloth and refrigerate immediately

9. Serve chilled

1. There are really two ingredients in an egg, such as the egg whites and egg yolks. They have different properties, each performing different functions. They are often separated in certain recipes in order to take advantage of their individual functions. Both parts of the egg contribute nutritive value to baked goods and dessert recipes, the egg white provides protein and the egg yolk provides fat. Being about 75% water, eggs also provide liquid to the mixture, thereby hydrating the other ingredients.

2. The only difference between brown eggs and white eggs is the breed of chicken they come from. There is no difference nutritionally between a brown egg and a white egg.

3. An egg is made of a lot of water, some fat and protein. The protein in the egg adds strength and structure to our baked goods. The fat adds moisture, flavour and richness. The water contributes to lot of leavening.

4. Eggs are also a natural emulsifier of fat and liquid helping them to be mixed without separating and so creating a uniform structure in the mix.

5. In some recipes where there is no leavening agent like baking powder or baking soda, the baked goods rise with the help of beaten white egg.

6. There are many types of eggs, but chicken egg is mostly used in baking and cooking.

7. Eggs are labeled by size according to their weight.

8. Without eggs, baked goods might be dry, flat or flavourful. It adds richness to baked goods.

9. Egg are 75% liquid which can thin a batter.

SOME HELPFUL KITCHEN TIPS:
1. Put boiled eggs immediately in cold water, that way it's easier to peel.
2. Soak ginger and garlic in water for few minutes before peeling. It peels off faster.
3. Use the blunt side of your knife or a spoonto peel your ginger.
4. Store food stuffs like rice, beans and garri in food containers and bucket to avoid insects and rodents.
5. When making amala, semo and wheat meal fufu, add some drops of vegetable oil to the boiling water before adding the flour and stirring. That gives a smoother fufu swallow without lumps and fluffy and prevents some from sticking to the bottom of your cooking pot.
6.For accidents with hot pots or kitchen disasters with fire while cooking, apply your baking flour immediately and it will heal without a scar.
7. Drop peeled irish potatoes in your pot of salty soup and warm to remove the salty taste.
8. Put onions in a hot oven or microwave for 30 seconds before cutting to avoid teary eyes.
9. To prevent your unripe plantain from ripening, keep in a bowl of water for as long as you want them to remain unripe, take them out when you want to ripen.
10. Lick salt as soon as pepper from the tough meat accidently enters your eye while struggling to bite. Salt calms the pepper immediately.
11. Avoid overloading your refrigerator because cold air needs room to circulate
12. For salty boiled yam, add more clean water and drain before serving.
13. Adding butter or vegetable oil to boiling pot gives nice texture to your boiled rice.
14. For lingering onion and garlic smells that refuse to go away even after washing hands, rub your palms on a stainless steel like the kitchen sink and it clears off. This one works like magic 😁

1. To save already cut yam from spoiling, rub red palm oil at the cut, it will preserve the yarn from getting strong till you are ready again to use it.

2. To preserve your ground fresh tomato, boil it, pour it in a clean container, pour vegetable oil on it and cover it. It will be fresh till anytime you want to make used of it.

3. If you want your beans to soft faster, wash it with salt before parboiling it.

4. Bitter leaf is the best leaf for your egusi soup.

5. To avoid stain on your hands while peeling plantains, put your hands in a salty water (water and salt) before you start peeling.

6. It is best to clean up your kitchen after cooking and not after eating your meal.

7. Always clean as you cook, so that there is less work load for you.

8. Add salt when cooking cocoyam for quick done.

9. To make your plantain get cooked easily, don't put it on the fire with salt. This is because, the salt will make it harder. Only add salt to it when it is almost getting ready.

10. If you want your meat to cook faster and get soft without using pressure pot, put thick iron spoon inside the meat pot while cooking.

USES OF SALT IN THE KITCHEN

1. To remove the odour from your hands after cutting onions, chicken or fish, just wash your hands with salt and water, then you will have no more smell.

2. To avoid the feeling of the hotness of pepper on your hands after cutting/slicing it with your hands, rub them with salt and vegetable oil or red oil and wash them.

3. When pepper mistakenly enter your eye, put a pinch of salt in your mouth, the hotness of the pepper will disappear and you will see the magic.

4. When storing empty containers or bottle, throw in a pinch of salt to help them from getting stinky.

5. Sprinkling some salt on your fresh peppers while pounding it, helps to make it pound quickly.

6. Soaking bitter leaves in salt and hot water, helps to remove extra bitterness before cooking with it.

7. If your liquid milk always spoil before you finish it, You can add pinch of salt when you first open it, it will help the milk to stay fresh longer.

How To Preserve Fresh Tomato Paste For A Year
(no Refrigeration Or Preservatives)

Currently we are having access to fresh tomatoes supply in the market because farmers in the North has produced it with irrigation system

A time will come when the northern supply got finished and tomatoes will become gold and we will all be shouting.

Tomato paste is a great way to preserve your tomatoes for about 1 year.

Sure you only need to preserve the one you will use from now till around August when tomatoes will be supplied again in the market from the ones produced by rain fed farmers...........
Tomato Paste Production

The materials below you need to provide

* Fresh Tomatoes

* Bottles with tight lid

( bottles are preferable because of air tights cover that will not allow air to oxygenate the tomatoes)

Steps by steps
1. Grind the fresh tomatoes

2. Put the grinded tomatoes in a pot and boil until the water dries out and it become solidified (paste)

3. Allow the paste to cool down

4. Scoop the paste into the bottle and sealed with the cap

5. Put the bottle in a pot and fill with water above the bottle beam

6. Put this on fire and boil for 10 - 15 minutes

7. Remove the bottles and keep your paste in a cool place.

8. No need for refrigeration
9. This can last for 6 - 12 months
