How to make SAUERKRAUT

- Chop cabbage into fine strips.

- Put them in a jar.

- Add salt.

- Add white vinegar to hasten fermentation but this is optional.

- Tamp down the cabbage to fit in the jar.

- Tightly close the jar. Never open once it is closed. Any leakage will attract mould and it will spoil.

- Leave the process for 2 weeks. You can go up to 3 - 5 weeks.

Apart from Vitamin C, the sauerkraut has probiotics for the gut.

Instead of wasting your money buying useless synthetic ascorbic acid. Make sauerkraut.

ASCORBIC ACID is NOT Vitamin C

We have all been brought up or educated with the fallacy that the other name of vitamin C is ascorbic acid.

I am here to tell you that ascorbic acid is not vitamin C.

Let me tell you something,

Vitamin C is a water-soluble vitamin and therefore this means that it has poor storage capacity. Your body needs constant storage through a diet that has vitamin C.

Vitamin C is stored in adrenal glands. These glands secrete very important hormones that promote the fight against infections.

Vitamin C is a complex vitamin. It comes as a whole package. Its ingredients are:

- Vitamin P: also known as BIOFLAVONOIDS which support connective tissues and collagen. This ensures that the walls of your blood vessels (endothelium) are strong hence preventing their fragility.

- Vitamin J:(Choline), which supports your lungs to hold as much oxygen as possible when you are doing an activity eg walking or running.

- Copper comes as a co-enzyme called TYROSINASE. This builds adrenal hormones that is responsible for immune function and fighting inflammation.

- Vitamin K: This is an important Vitamin that helps in blood clotting, so you won't experience unnecessary bleeding from simple bruises like tooth brushing.

- Ascorbic acid: this is the smallest component of vitamin C. It acts as a protective sheath that protects the other 4 ingredients of vitamin C.

The ascorbic acid that you all buy in the pharmacy store is synthetic. It is made from a mixture of CORN STARCH and SULPHURIC ACID.

Naturally, ascorbic acid weighs below 100 milligrams but what you buy sometimes is above 100 mgs meaning it is not natural.

Unfortunately, since the "vitamin c" that you buy has too much ascorbic acid for the body and lacks the other components, it leads to a deficiency of vitamin C. The common deficiency is SCURVY.

The best sources of vitamin C are:

1. Sauerkraut: a cup has 700 mgs of vitamin C.

2. Bell Pepper 🫑 : a cup has 90 mgs of vitamin C.

3. Lemon: 1 lemon fruit has 40 mgs of vitamin C. A big chunk of vitamin C in lemon fruit is on the PEELINGS. Its juice has less than 10 mgs while the processed lemon juice that you all love to buy thinking you are consuming vitamin C has ZERO Vitamin C.

4. Cabbage: a cup of cabbage has 30 mgs of vitamin C.

If you are feeling sick or have a cold and think you need vitamin C, it is better to drink apple cider vinegar in a glass of water than buying ascorbic acid.
