Check out this amazing pulled mushroom dish with chips! 🤭♥️ This is like a nacho plate but with pulled mushrooms instead. I made this delicious meal a while ago for using their yummy popped chips!
How do you like to eat your chips? 😍 I could really go for a bag right now… they are just too good!
PULLED MUSHROOM
💚 400g king oyster mushrooms
💚 1 white onion
💚 2 garlic cloves
💚 2 tbsp olive oil
💚 200g diced tomatoes
💚 1 tsp mustard
💚 1 tbsp apple cider vinegar
💚 2 tbsp soy sauce
💚 A pinch of salt
💚 1 tbsp paprika powder
SALSA
💚 50g red onion
💚 Juice of 1/2 lime
💚 1 tbsp olive oil
💚 150g avocado
💚 150g cherry tomatoes
💚 75g cucumber
💚 Coriander
💚 Salt and pepper
And add some Callowfit Smoky BBQ sauce
Instructions:
1. Preheat the oven to 200°C (fan). Place the mushrooms on a baking sheet lined with parchment paper and bake for 20 minutes. Pat them dry with a paper towel, then “pull” the mushrooms apart with two forks.
2. Chop the onions and garlic. Heat olive oil in a pan, add the onions and garlic, and let it simmer on low heat for about 10 minutes. Add the spices and stir well. Then, add the diced tomatoes, mustard, soy sauce, and apple cider vinegar. Let it simmer for another 5 minutes.
3. Add the pulled mushrooms to the pan, mix well, and simmer for 5 more minutes. Then, spread everything on a baking sheet lined with parchment paper and bake the pulled mushrooms for 15 minutes at 180°C (fan).
4. For the salsa, chop the red onion, avocado, cucumber, and cherry tomatoes into small pieces. Add them to a mixing bowl. In a small bowl, mix olive oil with spices and lime juice, then pour it over the veggies. Chop the coriander and mix it in.
5. Finally, spread the chips in a bowl, top with the pulled mushrooms, salsa, and a drizzle of Callowfit Smoky BBQ sauce.
