Het blijft toch elke week genieten van die mooie asperges. Vanaf het moment dat de eerste asperges bij mij in de buurt in de boerderijwinkel liggen, eet ik ze echt elke week. Het seizoen is tenslotte maar kort. Vandaag een echte klassieker. En echt een recept voor wie aardappel met ei als eiwitportie in zijn plan heeft staan. Maar natuurlijk ook als je al in fase 3 bent, of als je een sjoemelmaaltijd wilt eten. Nog steeds super gezond en vooral heel lekker!

Na het heerlijke gehakt recept van vorige week, delen we vandaag een vegetarisch recept. Oesterzwammen zijn in het voedingsplan een goede vegetarische eiwitoptie. Door oesterzwammen in kleine reepjes te snijden en te kruiden met verse kruiden die de typische smaak geven van gyros, kunnen ook de ouderwetse vleesliefhebbers genieten. Heerlijk met gegrilde mediterrane groenten als aubergine of tomaat en natuurlijk altijd perfect met een salade.

Spring Carrot & Ginger Soup with Pure Arctic Oil - a light yet nourishing soup, perfect for a fresh start! 🥕🫚

🔹 Ingredients:
🥕 4 large carrots, chopped
🧅 1 small onion, diced
🧄 2 cloves garlic, minced
🫚 1 tsp fresh ginger, grated
🍲 500 ml vegetable broth
🥥 1 tbsp coconut cream
🐟 1 tbsp Pure Arctic Oil (lemon flavor)

🔹 Instructions:
Sauté onion, garlic, and ginger. Add carrots and broth, simmer until soft. Blend until smooth, mix in coconut cream, and top with Pure Arctic Oil before serving.

Ben je te aan iets extra's op je knäckebröd, of bij je kipfilet of zijdezachte tofu? Dan is dit recept echt een uitkomst. Heerlijk van smaak, doordat je de groenten grillt. Je kunt het ook makkelijk van tevoren klaarmaken. Een mooi klusje in de voorjaarsvakantie. Als je het goed afsluit kun je het maximaal 5 dagen in de koelkast bewaren. Maar eerlijke gezegd denk ik dat je het in 2 dagen opeet, of anders je kinderen wel...
