Caramel chews with almond crunch 🥜🍫🎄
This recipe is good for a healthier weekend treat, or will be perfect as a "good for you" Christmas snack ♥️. These caramel chews will satisfy your sweet, crunchy and chocolate cravings, with just a hint of salt, and all of it made with only “do you good” ingredients🤗
12 medjool dates
Filling
3 tablespoons almonds - chopped and toasted lightly in a pan
2 tablespoons peanut butter or almond butter
1 good pinch of flake salt
1 tablespoon maple syrup
Mix all the ingredients well in a bowl. Make an incision in the dates and remove the stone. Put about 1 teaspoon of the filling in the dates and squeeze the date part together. Put the dates in the fridge or freezer while you make the chocolate coating.
Chocolate cover
You can melt 100 grams of ready-made vegan chocolate, gently over a warm water bath, or do as I do and make your own chocolate:
50 g cocoa mass
25 g cocoa butter
30 grams of maple syrup or other liquid sweetener
3 drops vanilla oil or ½ teaspoon vanilla powder
Melt the cocoa mass and cocoa butter gently over a water bath and mix in sweetener and vanilla powder. Whisk everything well together. Take the stuffed dates out of the freezer and dip one piece at a time in the melted chocolate, before placing them on a tray with baking paper and sprinkling them with flake salt. Put them in the fridge so that the chocolate hardens completely. Store in an airtight box in the refrigerator.
