Gluten free party recipe for New Years Eve

Broccoli Tater Tots

Ingredients:
1/2 pound broccoli, steamed and chopped (Approx 3-4 cups chopped broccoli)
2 eggs
1/3 cup grated Parmesan cheese (or any dairy-free cheese alternative can work)
4 Tablespoons almond flour
2 cloves of garlic, minced
Salt and Pepper to taste
Directions:
1. Preheat oven to 400 degrees F. Prepare baking sheet by lining with parchment paper.
2. Quickly blanch the chopped broccoli in boiling water for 1 minute. Remove and immediately run under cold water to stop cooking. Drain all water from broccoli.
3. Finely chop the broccoli. Add to bowl and mix with eggs, Parmesan cheese, almond flour, garlic and salt and pepper.
4. Scoop 1.5 tablespoons of mixture and gently form a tater-tot shaped ball. Place onto prepared baking sheet.
5. Bake 10 minutes, turning them over and bake for a remaining 10-15 minutes until golden brown.
6. Enjoy with ketchup, ranch dressing or your favorite dipping sauce.

Week 3
Hazelnut chocolate dacquoise cake with red wine cherries

INGREDIENTS
250g good-quality dark chocolate (70% cocoa solids)
8 egg whites
1 cup (220g) caster sugar
½ cup (60g) hazelnut meal
½ cup (60g) almond meal
1 cup (250ml) red wine
½ cup (125ml) maple syrup
2 cups (400g) pitted cherries
1½ tbs cornflour
200ml each thickened and double cream
1 tsp vanilla bean paste
Small mint leaves to serve (optional)

METHOD
1.Preheat oven to 180°C. Grease and line a 20cm round cake pan. Place chocolate in the freezer for 20 minutes. Once frozen, place in a food processor and process until it resembles fine coffee granules. Set aside.
2.Whisk egg whites and a pinch of salt on medium-high speed until firm peaks form. Gradually add sugar, 1 tbs at a time, whisking constantly for 8 minutes or until mixture is thick and glossy.
3.Combine chocolate and nut meals, then gently fold into the meringue. Pour mixture into cake pan and bake for 40-45 minutes until a skewer comes out clean. Leave in the pan for 15 minutes, then turn out onto a wire rack to cool. Do not refrigerate.
4.For the cherries, place wine and maple syrup in a pan over high heat. Bring to the boil, then add cherries and simmer for 3-4 minutes. In a small bowl, combine cornflour and 2 tbs water. Add to pan and whisk until sauce thickens. Transfer to a container and cool, then chill for 1 hour.
5.To serve, place cake on a serving platter. Whisk thickened cream, double cream and vanilla paste until soft peaks form. Top cake with whipped cream. Spoon half the red wine cherries over the cream. Scatter with mint (if using) and serve with remaining cherry sauce on the side.

MENOPAUSE SYMPTOMS

The term menopause is commonly used to describe the years when a woman's ovaries gradually begin to produce fewer eggs and less of the female hormones oestrogen and progesterone.
It usually occurs between the ages of 45 and 55 years. Early menopause is when periods stop before the age of 40 years.

Physical signs and symptoms may include:
• Hot flushes (occurring in approximately 60% of women)
• Sweats (often at night)
• Headaches
• Tiredness
• Joint and bone pain
• Palpitations
• Thinning hair
• Dry skin
• Unusual skin sensations
• Vaginal dryness
Psychological signs and symptoms may include:
• Anxiety
• Reduced interest in s*x
• Irritability and mood swings
• Difficulty concentrating
• Loss of confidence
• Forgetfulness
• Depression
• Difficulty sleeping

Treatment options include:

Menopausal Hormone Therapy (MHT) involves replacing hormones previously produced by the ovaries. It can be effective in relieving the symptoms of hot flushes, night sweats and dryness of the va**na. MHT can also help to reduce the risk of osteoporosis following menopause.

Diet
Women need a higher intake of calcium and vitamin D after menopause to help reduce the risk of osteoporosis. Excellent dietary sources of calcium include low-fat dairy products (milk, cheese, yoghurt), nuts, dark green vegetables (eg: broccoli, spinach) and fish with bones in (eg: sardines, salmon). An intake of at least 1000mg of calcium daily is recommended for women after menopause. Vitamin D, which helps the body to absorb calcium, is manufactured by the skin after exposure to sunlight; small quantities are also found in foods such as dairy products and eggs. If the diet contains insufficient amounts of calcium and vitamin D, dietary supplements may be required. Eating a healthy balanced diet that is low in fat and refined sugars, and maintaining a healthy body weight, is recommended. Limiting alcohol and caffeine, and not smoking, are also important.

Regular weight-bearing exercise such as walking, dancing, tennis, aerobics and golf helps in maintaining a healthy weight, fitness and general wellbeing. Exercise also helps to decrease the risk of osteoporosis by strengthening the bones and may assist in reducing the severity of menopausal symptoms such as hot flushes. Specific pelvic floor exercises can help to reduce urinary problems such as incontinence and pain on urination. Rest and stress reduction also play an important role in managing menopause symptoms. Fatigue and stress can worsen symptoms; so employing strategies to ensure adequate rest is attained and stress is managed will assist in alleviating symptoms.

Week 2
Mushroom quinoa risotto with hazelnut gremolata
INGREDIENTS
20g unsalted butter
1 onion, finely chopped
2 tbs finely chopped dried porcini mushrooms
400g mixed mushrooms (such as Swiss brown and cup), sliced
3 garlic cloves, finely chopped
11/2 cups (300g) white quinoa, rinsed
1.25L (5 cups) gluten-free chicken stock
2 tsp wholegrain mustard
1/2 cup (40g) grated parmesan, plus extra to serve

METHOD
1.Place a heavy-based deep frypan (with a lid) over medium heat. Add butter and stir until melted, then add onion and cook, stirring, for 5 minutes or until softened.
2.Add the porcini, mixed mushrooms and two-thirds of the garlic. Cook, stirring, for 10 minutes or until softened and beginning to caramelise.
3.Add the quinoa, stirring for 2 minutes until well coated and slightly toasted.
4.Increase heat to high. Add 2 cups (500ml) stock and bring to the boil, then reduce heat to low. Cover and cook for 10 minutes or until stock is evaporated.
5.Repeat process with another 2 cups (500ml) stock and cook for 10 minutes or until stock is evaporated and quinoa is al dente. Remove from heat and stir through mustard, parmesan and remaining 1 cup (250ml) stock. Set aside for 5 minutes.
6.To make the gremolata, combine hazelnuts, parsley and lemon zest with remaining garlic. Stir through olive oil. Top risotto with gremolata to serve.

Turkey roulades with sage stuffing
INGREDIENTS
4 x 180g turkey or chicken breast fillets
2 tablespoons chopped sage, plus whole fried sage leaves to serve
4 thin pork and herb sausages, casings removed
24 flat pancetta slices, rind removed
Roast potatoes and gravy, to serve

METHOD
1.Place fillets between sheets of baking paper and use a rolling pin to flatten to 1.5cm thick. Season and scatter with chopped sage. Divide sausage meat among fillets and roll up tightly to enclose.
2.Arrange 6 pancetta slices on a work surface, slightly overlapping. Place 1 fillet at the bottom edge of the pancetta and roll up to enclose, then wrap tightly in foil. Repeat with remaining pancetta and fillets, then chill for 1 hour to firm up.
3.Preheat the oven to 180°C.
4.Place parcels on a baking tray and roast for 35 minutes. Remove foil and bake for a further 10 minutes or until pancetta is golden and the meat is cooked through.
5.Slice the roulades, garnish with fried sage leaves and serve immediately with roast potatoes and gravy.
