I love olive oil as a dressing and even more, I absolutely love the manuka smoked olive oil from Robinsons Bay, Akaroa.

The seller comes to Riccarton House market on Saturday mornings and he has a variety of flavoured olive oils, all of which are super delicious.

If you can’t access flavoured olive oils, then another delicious dressing is simply one part balsamic vinegar to 2 parts olive oil. Shake it up well before using each time.

We normally self cater when travelling and last night we needed to stay in a hotel, before our flight this morning, so we used up our fresh food. We needed food for dinner and breakfast and as our hotel room has a kitchenette we headed to Woolworths.

We bought these two salads + 200g cooked chicken and then shared it between plates.

Breakfast was yoghurt + fresh raspberries and strawberries + some leftover LSA that we still had.

There are generally ‘better choices’ to be had and most good sized supermarkets have a decent amount of options.

Nothing quite like clear, frosty air, sunshine and snow on the mountains.

This is a super easy, tasty, quick light vegetarian meal. Just add salad or veggies on the side.

For 2 serves.

4 large eggs
1/2 cup grated tasty cheese plus an extra tablespoon extra for the top of the ramekins
1 cup of cottage cheese
Salt and pepper to taste

Optional-fresh chopped herbs

Spray two ramekins with cooking oil.

Mix all the ingredients well, I used a whisk, then divide between the ramekins. Sprinkle the extra tablespoon of grated cheese on top of each ramekin and place on a baking tray.

Cook at 180 degrees for around 20-25 minutes , until the eggs are set and the top is starting to brown.

With the start of 2025 and most people now back in the workplace, it is a good time to establish healthy eating routines.

Whether it be for fat loss, increased energy, mitigation of future health issues, or just because you aren’t happy with where you currently are, taking back control with nutrition and lifestyle is the way to go.

While every year seems to bring new fads in fat loss and new ways of losing fat fast, really, nothing much has changed in the last 22 years that I have been working with clients. The basics still apply to nearly everyone who wants to lose fat and get healthier.

You cannot get away from these basics:

Plan your week ahead, shop accordingly and prep food.
Pay attention to portion sizes, measure, don’t guess.
Protein is king, include a source of healthy protein at each meal and snack.
A large serving (a couple of handfuls) of higher fibre, lower carb veggies should feature in your lunch and your dinner.
Drink water/tea/coffee with minimal milk throughout the day.
Make time to include some kind of exercise in your week, most days for at least 30 minutes.
Be aware of mindless eating - keep a diary!

None of the above is especially difficult, the most difficult part is being ready to change, so that you do put in the effort required.

I am still working a few hours a week, mostly online, but if you would like to know how I may be able to help you and if you are ready to make some changes, drop me an email lynda@nutritionforlife.co.nz

Wishing you all the best for a healthy and happy 2025 where you reach your goals.

It is hard to believe that it is Xmas next week and another year is almost over.

2024 was the year we took a big leap and headed to Canterbury where we have settled into peaceful little West Melton very happily. I still do a few hours work per week, but have been fortunate enough to create a great work/life balance and have had the time to develop pretty gardens and to also explore lovely little country towns.

Sometimes making a big change in your life is invigorating and gives you new purpose, but making the decision to make that change can be difficult.

Working towards living a healthy lifestyle and giving up old, less helpful habits can be challenging for a lot of people. But, if you are not happy with where you are, with your physique, your energy and fitness levels, then maybe it is time to seek help to achieve better things in 2025.

Wishing you all good health, happiness and safe travels in 2025.
