I've been enjoying this fresh, crunchy salad lately and thought I would share the recipe.

You can serve it on baby spinach leaves for extra greens if you like or add cherry tomatoes, but it is very yummy and super healthy on its own too.

Broccoli Salad

Serves 6

300g broccoli florets cut very small

200g red pepper (1 large) cut into small pieces

1 apple, peeled and quartered and cut into small pieces

30g of sunflower seeds or cashews or pinenuts

Dressing

25g olive oil

15g cider vinegar or white balsamic

1 tsp honey

Salt and pepper

Shake or mix dressing ingredients and then toss through prepared veggies.

I love olive oil as a dressing and even more, I absolutely love the manuka smoked olive oil from Robinsons Bay, Akaroa.

The seller comes to Riccarton House market on Saturday mornings and he has a variety of flavoured olive oils, all of which are super delicious.

If you can’t access flavoured olive oils, then another delicious dressing is simply one part balsamic vinegar to 2 parts olive oil. Shake it up well before using each time.

We normally self cater when travelling and last night we needed to stay in a hotel, before our flight this morning, so we used up our fresh food. We needed food for dinner and breakfast and as our hotel room has a kitchenette we headed to Woolworths.

We bought these two salads + 200g cooked chicken and then shared it between plates.

Breakfast was yoghurt + fresh raspberries and strawberries + some leftover LSA that we still had.

There are generally ‘better choices’ to be had and most good sized supermarkets have a decent amount of options.

This is a super easy, tasty, quick light vegetarian meal. Just add salad or veggies on the side.

For 2 serves.

4 large eggs
1/2 cup grated tasty cheese plus an extra tablespoon extra for the top of the ramekins
1 cup of cottage cheese
Salt and pepper to taste

Optional-fresh chopped herbs

Spray two ramekins with cooking oil.

Mix all the ingredients well, I used a whisk, then divide between the ramekins. Sprinkle the extra tablespoon of grated cheese on top of each ramekin and place on a baking tray.

Cook at 180 degrees for around 20-25 minutes , until the eggs are set and the top is starting to brown.
