I am moving from the beautiful Ōtautahi over to Perth at the end of the year, and something I am going to miss so much is my mums delicious cooking, like these sticky tofu poke bowls with tahini dressing 🤤

I have finished seeing clients for the year to give myself some extra time to organise for the move, but it has been another awesome year of working with so many amazing people and helping them towards their health goals ❤️

Love my job and love all of you who make it so fun and rewarding, so thank you to everyone who has been apart of my nutrition journey this year, y’all are the best 🥂

Miso soup & noodles 🍜
One of my forever favourite meals, quick, easy, cheap and delicious.
Takes 2 minutes to make, just slice some carrots, add some rice noodles, canned corn, wakame (dried seaweed which can be found at any Asian grocer) and miso paste, pour some boiling water over top, cover for a minutes or two, give a mix and then chuck some spring onion and sesame seeds.

Some beautiful fresh spring rolls that we made yesterday.
We tried rolling these up a bit different this time which made for even prettier rolls, funner to make but much messier to eat 😂
I marinated the tofu in heaps of ginger, lime rind and juice, miso paste, fresh chilli, tamari sauce and sesame oil.
For the dipping sauce I used the leftover marinade, another lime, the rest of the chilli, lots of peanut butter and some more tamari.
In the rolls was a big rainbow of different fresh vegetables, we had carrots, cucumber, celery, pickled daikon, capsicum, radish, bok choy, kale, and cherry tomatoes ✨

It’s artichoke season 💫
These are super easy to prepare and fun to eat.
Give them a rinse and try remove any lil insect buddies that may be living in them, then boil or steam them for 30-40minutes.
Once they are cooked make up some garlic butter sauce, I just used 1/4 cup of nuttelex almond butter, juice from 1 lemon and a tablespoon of crushed garlic- melted in a pot.
Pull the petals off and dip the bottom bit in the sauce and then use your teeth to scrape off the fleshy part of the petal.
When you get the the prickly stuff, scrape it off with a spoon and then you get to the heart which is the tastiest 🥰

Grilled pineapple on a coconut chia pudding 🤩🤤
This was 10/10 tasty tropical holiday breakfast vibes 💛☀️✨
Plus it took about 3 minutes to prepare.
Chia seed pudding is super great because you can make a batch and then just have it hanging in your fridge for a super speedy breakfast, perfect during a busy work week.. but also lovely on a slow sunny morning.
