Happy New Year!

It’s that time of year again where New Year's resolutions are being made (and start to be broken 😁). I don't know about you but my official New Year resolutions start today!

As I am very passionate about considering the environment when making food choices I thought I would kickstart this year with a post regarding the Planetary diet. In this following post, I dive into what this diet is, why considering the environment when making food choices is important, and provide general food guidelines which consider both human health and the environment.

What I hope is that we can all create a few goals or resolutions this year regarding our food choices to help reduce our impact on the environment.

There is an ongoing debate in the nutrition world around whether soy products like tofu are good for human health. With all the junk food available on our supermarket shelves I can’t help but wonder if this focus around whole soy products is industry-driven since they are a common staple of many vegetarian and vegan diets, but nonetheless, this controversy has caused a lot of confusion. Due to our fast-paced lifestyles, more and more people are ending up with low energy, tiredness and fatigue. Since these symptoms are common and somewhat normalised in our society, we can spend most of their lives running on adrenaline until eventually it all comes crashing down. We have made it to what will hopefully be the better half of 2020. To continue with the Year of Sustainability Challenge, this month will be dedicated to hosting a beach clean up. Each year much plastic is left disregarded around our beaches and tonnes end up in our oceans. This is having devastating effects on marine ecosystems. This month get your friends or families or even just yourself together and head out to your local beach, or river or lake if you do not live near a beach and pick up some rubbish.

Can you believe it is already June?! When 2020 started I thought this was going to be the ultimate year of change, growth and self-discovery. But within a few months, this was put to a halt. Many of us have spent almost half of this year locked safely inside stopping COVID-19 from spreading across the country. But now that things are slowly starting to return to normal, it is time to kickstart the mid-year goals!

This month is the start of Junk-Free June, a fundraiser that started in 2015, to raise money for the Cancer Society. The challenge for Junk Free June is to remove all the junk foods and drinks from our diets for the entire month of June! This challenge is a great way to recapture our health as we move into the colder winter months where we need our health and a strong immune system more than ever.

Junk-Free June is a part of my Year of Sustainability Challenge so join in and give it a go.

How can we be more sustainable in lockdown? Simple! Hold on to your recycling. Most, if not all, of the recycling that is being collected during lockdown, is heading straight for the landfill. This lockdown won’t be forever so if possible hold on to your recycling. Landfills across New Zealand are increasing in size, with millions of dollars being poured into digging up more land to make room for more waste, let work together to stop this from needing to happen. This month, your challenge is to hold on to your recycling until services are up and running again šŸ€

My boy Ghosty eating his Kale ā˜˜ļøKale has been labelled as a superfood because of its awesome nutritional status. While all fruit and vegetables are superfoods in their own special way, kale is a rich source of vitamin K which is critical for healthy blood clotting, contains beta-carotene which is a precursor for vitamin A which is important for reproduction and growth as well as eye health, and vitamin C which is a powerful antioxidant which helps to protect our body from oxidative damage. Kale also contains calcium which is vital for bone health and potassium which has been shown to help lower blood pressure. Each of these vitamins and minerals plays a critical role in supporting our health and wellbeing. My favourite way to eat kale is homemade kale chips! The recipe is on my blog. 😃

Here is an incredibly insightful video of a speech made back in 2008 about infectious diseases. It's safe to say we have not learnt from past mistakes and until changes are permanently put in place we will continue to suffer attacks like COVID-19 until eventually self-isolation and social distancing become the normal way of life.

If the government has the power to shut down an entire country in a matter of days, we have the power to demand that the breeding grounds of these diseases are also shut down so we the people do not have to go into a lockdown every few years fighting another preventable virus.

If this experience has shown us one thing, it is that we are all connected whether we like it or not. We can not ignore what is happening in other countries just because it doesn't happen in here. The fact is we are all human beings, connected by international travel, and our individual actions have the power to affect the entire world.

It is up to each of us to ensure it does not happen again.

It is estimated that New Zealander’s throw away approximately 295 million single-use coffee cups every single year. Maybe we don’t think that our daily takeaway coffee matters or maybe we are so accustomed to the convenience that the hassle of having to remember and wash our reusable coffee cup is just too much to handle. Whatever it is, it is time we all step up and make a difference to our contribution to the waste epidemic. It takes on average 10 minutes to enjoy a cup of coffee and over 30 years for the takeaway coffee cup to breakdown. There is no shortage of reusable coffee cups, and some awesome cafes even offer discounts if you use them. And sadly even some compostable coffee cups are still just heading for the landfill. So challenge yourself this March to say no to coffee (or any hot beverage) if you forget your reusable coffee cup!

There is this huge misconception that being 'thin' means you are healthy. This is NOT the case. Human health is defined by multiple things, and one of the most important aspects of your health is your mindset. Your mindset will influence most other aspects of your health including eating a nourishing diet, exercising appropriately, finding gratitude for your life, and being able to cope with life stresses.

Following health advice from people just because they appear 'thin' and post photos on social media of celery juices can be risky. Firstly social media is often used to portray an ā€˜image’ which is far from the truth. I can easily claim to drink celery juices all day while actually consuming a bottle of wine and skipping dinner most nights in order to stay ā€˜thin’. With ā€˜thin’ being portrayed as healthy, we need to remember that putting our body under pressure to maintain a certain level of ā€˜thinness’ is also not healthy. "Pressure" is when we are not eating enough food putting ourselves at risk for nutritional deficiencies and muscle wasting, excessively exercising which can negatively affect your muscles, tendons, hormones, heart, mood and much more, or replacing meals with substances like ci******es, alcohol or caffeine.

At the end of the day, no one can see the plaque building up inside of their arteries, our heart can not tell us that it is struggling and under pressure, we can not hear our organs crying for help, and being 'thin' does not make someone immune to this. If you are truly looking for health advice look beyond skin deep and find a health-care professional that you can trust.

Recipe: Summer Lentil & Tomato Bruschetta

Bruschetta is one of my all-time favourite meals! It is an Italian inspired dish that contains a combination of olive oil, fresh tomatoes, fresh basil and crusty (often stale) bread. So when summer hits here in New Zealand and tomatoes and basil are in season, bruschetta quickly becomes a staple meal in my household! It is so simple to make, doesn't require any crazy ingredients, and of coarse is super nourishing and delicious. So I wanted to share one of my favourite bruschetta combinations that we have been enjoying a lot this summer. It includes lentils to increase the fibre, protein and bulk of the dish, turning a traditional appetiser and snack into a satisfying and filling meal ā¤ļø
