Deviled Egg Spread 😋

💁‍♀️ 16 SERVINGS ⏲ PREP TIME: 5 - 10 MINS 🍳 COOK TIME: 15 MINS

🥕 Ingredients

• 10 hard-boiled large eggs
• 1 cup mayonnaise
• 1 cup finely shredded cheddar cheese
• 250g bacon strips, cooked and crumbled
• 1/4 cup finely chopped pickled banana peppers
• 2 teaspoons juice from pickled banana peppers
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
• Ritz crackers and assorted fresh vegetables

👨‍🍳 Directions

1. Place eggs in a large bowl; mash with a fork. Stir in mayonnaise, cheese, bacon, banana peppers, juice from peppers, salt and pepper.

2. Refrigerate until serving. Serve with crackers and vegetables.

Asparagus & Cheese Frittata 😋

💁‍♀️ 4 SERVINGS ⏲ PREP TIME: 5 MINS 🍳 COOK TIME: 20 - 25 MINS

🥕 Ingredients

• 5 large eggs
• 1/2 cup grated parmesan or similar cheese
• 1/2 cup vegetable broth
• 1/4 tsp. salt
• 1/4 tsp. pepper
• 2 slices Italian bread (1cm thick), cubed
• 2 tbsp. olive oil
• 120g cut fresh asparagus (1cm pieces)
• 1 medium onion, finely chopped
• 60g grated cheese

👨‍🍳 Directions

1. Preheat grill. In a small bowl, whisk the first 5 ingredients until blended; stir in bread cubes.

2. In an ovenproof frying pan, heat oil over medium-high heat. Add asparagus and onion; cook and stir for 8-10 minutes or until onion is tender.

3. Reduce heat to medium-low; pour in egg mixture. Cook, uncovered, for 4-6 minutes or until nearly set. Sprinkle with cheese.

4. Grill for 5-7 minutes or until cheese is melted and eggs are completely set. Let stand for 5 minutes. Cut into wedges.
