β€’ 10 hard-boiled large eggs
β€’ 1 cup mayonnaise
β€’ 1 cup finely shredded cheddar cheese
β€’ 250g bacon strips, cooked and crumbled
β€’ 1/4 cup finely chopped pickled banana peppers
β€’ 2 teaspoons juice from pickled banana peppers
β€’ 1/4 teaspoon salt
β€’ 1/4 teaspoon pepper
β€’ Ritz crackers and assorted fresh vegetables

β€’ 5 large eggs
β€’ 1/2 cup grated parmesan or similar cheese
β€’ 1/2 cup vegetable broth
β€’ 1/4 tsp. salt
β€’ 1/4 tsp. pepper
β€’ 2 slices Italian bread (1cm thick), cubed
β€’ 2 tbsp. olive oil
β€’ 120g cut fresh asparagus (1cm pieces)
β€’ 1 medium onion, finely chopped
β€’ 60g grated cheese

1. Preheat grill. In a small bowl, whisk the first 5 ingredients until blended; stir in bread cubes.

2. In an ovenproof frying pan, heat oil over medium-high heat. Add asparagus and onion; cook and stir for 8-10 minutes or until onion is tender.

3. Reduce heat to medium-low; pour in egg mixture. Cook, uncovered, for 4-6 minutes or until nearly set. Sprinkle with cheese.

4. Grill for 5-7 minutes or until cheese is melted and eggs are completely set. Let stand for 5 minutes. Cut into wedges.

ASIAN MEATBALL

β€’ 450g pork mince
β€’ 1 cup ground pork rinds
β€’ 1 egg
β€’ 1/3 cup minced spring onion
β€’ 3 tablespoons grated ginger
β€’ 2 garlic cloves, minced
β€’ 2 teaspoons toasted sesame seed oil
β€’ 2 teaspoons liquid aminos or soy sauce
β€’ 1/4 teaspoon salt

DIPPING SAUCE

β€’ 1 tablespoon avocado oil
β€’ 1/3 cup soy sauce
β€’ 2 tablespoons rice vinegar
β€’ 1 tablespoon golden monk fruit or Brown Swerve
β€’ 1 teaspoon peanut butter
β€’ 1 teaspoon crushed red pepper flakes
β€’ 1 teaspoon toasted sesame oil
β€’ 1/4 teaspoon garlic powder
β€’ Squeeze of lime juice

πŸ‘¨β€πŸ³ Directions

1. Add ingredients. To a large bowl, add all of the meatball ingredients and mix until combined.

2. Roll meatballs into a golf ball size shape.

3. Preheat air fryer to 200C for 3-4 minutes before adding in the Asian meatballs. Add the meatballs to the basket of the air fryer and cook at 200C for 6-7 minutes for until the interior of the meatball is cooked through.

4. On a baking paper lined tray, add Asian meatballs and bake in a 200C oven for 9-12 minutes or until cooked through.

5. Heat a couple tablespoons of avocado oil in a fry pan over medium-high heat. Add meatballs in a single layer into the fry pan. Space about 2.5cm apart making sure not to overcrowd the fry pan because you want the meatballs to brown on the outside, not steam. Work in batches. Cook meatballs on all sides until browned on the outside and cooked through in the interior.

6. Freezer instructions. Place meatballs in a freezer safe bag and arrange in a single layer. To thaw out for cooking, place in the refrigerator the night before cooking.

7. Make sauce. To make the sauce, add the ingredients except the lime juice into a saucepan. Heat over medium high heat until bubbly. Then reduce heat to a simmer. Continue to cook for 3-4 minutes. Remove from heat and add in lime juice.

β€’ 450g ground chicken
β€’ 1 egg
β€’ 1/2 cup shredded mozzarella cheese
β€’ 1/4 cup grated parmesan cheese
β€’ 1 teaspoon salt
β€’ 1 teaspoon italian seasoning (optional)
β€’ 1/2 teaspoon garlic powder (optional)

πŸ‘¨β€πŸ³ Directions

1. Preheat oven to 230 degrees.

2. Mix ingredients. Combine all ingredients in a medium bowl and mix until combined. Form chicken mixture into a ball.

3. Press into pizza crust shape. Place a piece of baking paper on a baking tray, pizza pan or pizza stone. Press chicken mixture out onto the parchment paper to form a pizza crust shape that is about 1 cm thick.

4. Bake in a 230 degree oven for 15 minutes.

5. Top it. Add your favourite pizza toppings. Broil on high to melt the cheese on the toppings until bubbly.
