Zucchini Pickle
Step 1 : Soak the following ingredients together for 2 hours
• 1.4 Kgs grated zucchini
• 2 medium brown onions finely chopped
• 1-2 red capsicums finely chopped
• ¼ cup salt
• Enough water to cover the mix
Step 2: In a pot put:
• 3 cups raw sugar
• 3 cups white vinegar
• 1 tbsp turmeric
• 3 tbsp yellow mustard seeds
• 1/2 tsp curry powder
Step 3: Bring to boil and boil above mixture for 5 minutes
Step 4: Add drained zucchini mixture and bring back to boil and boil for 2 mins.
Step 5: Thicken
Add 3 heaped tablespoons cornflour to some vinegar to make a wet paste. Put this into pot with zucchini and cook for 2-3 minutes to thicken.
Step 5: Place into sterilised jars.
