Little Ramen bowl to spice up your week. 🌶🌶
I hardly ever follow recipes but use my taste buds to make complimentary flavours. This means you don’t have to buy EVERY ingredient in a recipe, instead use what you have at home already and experiment with herbs and spices and textures. This is how I developed this tasty bowl - if you don’t have an ingredient don’t worry! 🍲
Ingredients:
2L water + 2x chicken frames/bones
3 thumbs of fresh ginger
1 dried red chilli
3 large cloves of garlic
3T fish sauce
3T miso paste
2T sesame oil
1x lime
Pork steaks - or your choice of protein
Rice noodles or edamame noodles (edamame are more nutrient dense!)
Mushrooms
Spring onions
Boiled eggs (optional)
Coriander
If you don’t have chicken frames you can use 2L of chicken broth. If you do have the frames we’ll make the broth as we go :) Get the water onto boil in a large pot and add the bones, grated ginger, chopped garlic, sliced chilli and miso. Once this is boiling turn it down to a simmer for 30mins. Near the end add in the fish sauce, sesame oil and lime rind + juice. Season to taste!
Meanwhile, heat a fry pan with coconut oil to almost smoking. Rub the pork steaks with salt and pepper and coconut oil. When the pan is hot, balance the pork chops with the fatty side down to get a nice crispy fat layer! Once crisped place the chops completely in the pan for ~10mins each side or until cooked through. Remove the chops and set aside. Cook the sliced mushrooms for 5mins in the hot pork fat.
Cook your choice of noodles.
Place the noodles in a bowl. Pour over the drained broth. Add sliced pork, mushrooms, chopped spring onions, half a boiled egg if you desire, coriander and a sprinkle of sesame seeds. 🤌🏽🤌🏽🤌🏽
