Garden to Plate! Check out these leaves. The fruits of my weekend toil - a bee🐝 and berry🍓 garden😍

I love getting into the garden at this time of year with the warm weather and longer days. But I know I'm not going to have time to maintain a vege garden over summer. So this year I've gone low maintenance with strawberries, raspberries, blueberries and blackberries, and a few pretty florals too for our unsung heroes, the bees. First resident settled in already🐝

This is what a friend made for breakfast this morning💕 I have food envy! Will have to make some tomorrow😁

Ingredients
1 bunch Swiss chard washed and leaves chopped. (I also added the stems)
3 cloves green garlic, minced or 1 clove regular garlic
1 cup all purpose flour
1 tbsp baking powder
3/4 tsp kosher salt
1 tsp cumin
1 whole egg (I used 2 eggs)
3/4 cup milk (I used oat milk)
1 tsp fresh lemon juice
4 tbsp unsalted butter melted (I used coconut spread)

Instructions
1. Wilt the chard with the garlic in 2 tbsp water over medium heat. Continue cooking until all water has evaporated and chard/garlic are looking dry. Set aside.
2. In a blender, combine the flour, milk, melted butter, egg, lemon juice, salt, cumin, salt and baking powder. Process briefly then add the chard and garlic. Process until all combined.
3. Cook pancakes

Despite the cold snap we seem to be experiencing at present, the weather is warming and before you know it we'll be sitting on the deck with the bbq cranking!

And how good would it be if you were also sipping a refreshing, ice cold lime water, or mojito (traditional or virgin) (thanks Janine:))? Trouble is, limes are now worth their weight in gold! Ah, but thankfully, back in Oct when they were just falling on the ground, you made lime ice cubes, yehhh!

This is also a great way to store lime juice for adding to curries, baking and smoothies (thanks ).

Thank you all for your suggestions. I'm over half way through my lime stockpile!
