Here you go π Raspberry & Coconut Bliss Balls
π©· Makes 18 delicious bliss balls
π©· INGREDIENTS
Coconut oil: 1 1/2 T
Peanut butter: 2 T
Maple syrup: 2 T
Monk fruit extract: 2 T
Raspberries (frozen): 1 1/2 cup
Lemon juice: 2 T
Vanilla extract: 1 tsp
Mixed nuts (almonds, cashews, walnuts, brazil nuts, hazelnuts): 3/4 cup
Desiccated coconut: 1 1/2 cup
Chia seeds: 2 T
Vanilla protein powder: 1/2 cup
Coconut flour: 1/2 cup
Psyllium husk: 3 T
π©· METHOD
β Add the coconut oil, peanut butter, maple syrup, monk fruit extract, vanilla extract, lemon juice and frozen raspberries to a pot and heat over low-medium heat, stirring until melted and combined
β In a food processor blend the nuts until smooth. Add 1 cup of the desiccated coconut, the chia seeds, protein powder, coconut flour, psyllium husk and the wet ingedients from the pot to the food processor. Blend until smooth and well mixed (a ball will form with the mixture)
β Cover a plate with the remaining desiccated coconut
β Roll the mixture into 18 bliss balls and roll in the desiccated coconut
β Place in a container, referigerate and leave to set
π©· TIPS
This recipe uses a whey protein powder, if you are using a plant based protein powder you will need extra liquid as plant based protein powders are more absorbent. Add an extra 2-3 tablespoons lemon juice or use unsweetened almond milk
