Green Goddess Avocado Dressing

2 x avocados
1 x handful parsley
1 x handful mint
1 tablespoon Dijon mustard
1/2 to 1 cup olive oil depending on the consistency you want
1 lemon, juiced
1-2 tablespoons vinegar (I used chilli vinegar) Apple cider vinegar or red wine vinegar would be good
Salt to taste

Place all ingredients into a food processor and blend until smooth, add more olive oil to your preference.
