Cryogenic Products Limited (CPL). CPL is a boutique liquid nitrogen producer supplying hospitals, research facilities, engineering firms and film companies in Wellington. One of our original aims was to make science cheaper in Wellington and we have achieved that, for example we save the Malaghan Institute of Medical Research thousands of dollars each month. We then realised that we could save all sorts of industries and trades money, especially the retail and hospitably area. Liquid nitrogen is a completely natural product it is simply 700 litres of air compressed into 1 litre registering at a freezing point of -196oC. Under New Zealand law it is declared as non-hazardous, however the product has to be treated with respect. In July 2009 a cook lost his hands and landed in a coma when he tried to seal liquid nitrogen in a container. Liquid nitrogen can burn your skin like fire as well as suffocate you before you know what’s happening. Despite these dangers it has become one of the key methods in a new style of cuisine, molecular gastronomy, which borrows tools from the science lab and ingredients from the kitchen. Using liquid nitrogen in cooking we can create seemingly impossible dishes such as an alcoholic sorbet with the absence of ice or freezers, using the scientific principle that the freezing point of alcohol is -1140C.
