Like many vegetables, fennel loses some vitamin C during cooking. But cooking also softens the fibres, improves digestibility and brings out fennel’s natural sweetness.

Nutrition is rarely about “perfect”.
It’s about variety, balance and eating more real food consistently.

Try:
- shaved raw fennel in salads
- roasted fennel with orange
- fennel soup on cooler evenings

Fennel often gets labelled as an “exotic” vegetable in New Zealand, but it may be one of the most underrated healing foods we can grow.

Rich in fibre, antioxidants and digestive-supportive plant compounds, fennel has been used for centuries to soothe bloating and support gut health.

The best part? Once roasted, fennel becomes sweet, mellow and delicious.

Maybe it’s time this ancient medicinal vegetable made a comeback in Kiwi kitchens

Nothing is more ‘organic’ than growing your own fruit & vegetables.

Start small.
Choose one thing that you love to eat & plant it.

Or go large.
Allocate part of your garden to food.
Plant a variety of vegetables & maybe a fruiting tree.

The taste sensation is remarkable compared to shop bought produce.

Look for signs that say organic or spray free.
This is the food that is seasonal, fresh & grown with a lot of biodiversity.

For me this is an energetic match to our microbiome (our gut bacteria).
