We make the best out of everythingπ―π±.. sweet pineapple juice ππΉfrom pineapple skin, no added sweetener. This time, we had an over ripe one. When this happens, we either freeze the pulp for smoothies or squeeze the pulp and skin in a pot to make juice. We bring the mixture to a boil before taking it off the heat, allowing it to cool before enjoying. πππ―π±π

Meltdown Mondayπ« .. heavy rains yesterday made us forget to pick up some peanut butter for kid's lunch todayπ€¦π»ββοΈ. I had a pack of chopped nuts in the freezer and some vegetable stock. What's a mom to do?π€ Make her own peanut butter of course! π Tossed the nuts, some vege stock , 1 clove of garlic and a pinch of salt in a blender and blitz til silky smooth. Feedback: Kids loved it and wondered what it was ππππ±π―

Back to school lunches. Getting the plant protein and fiber back in with lentil spaghetti, steamed garlic greens and broccoli. I roasted a bulb of garlic last night with our sweet potatoes and squeezed that into the steamed greens. Yumm ππ½π―πΏ
When i make spaghetti with lentils, I always make the sauce first then I add cooked lentils and some breadcrumbs. I find that the breadcrumbs give a different texture to the dish. Kids love it, so I'm not complaining ππΏπ―

Soups made simple ππ½πΏ
With plantbased soups it really easy to make. Saute your aromatics and spices (crushed whole garlic, chopped onion, ginger,etc) in a little water. Once translucent, add generous seasoning. Stir well and allow seasoning to release fragrance. The add veges (like chopped carrots, celery, potatoes, pumpkin etc) and stir until water from these vege come out and veges are coated in the seasoning.. (Watch the potatoes, the edges should become a little transparent or lighter). Then add mix bean soup mix or soup mix made of beans, barley, etc. Stir well to incorporate. The add 3 times the water of the soup mix and bring to boil. Reduce heat after boiling until beans are cooked. Find the whole crushed garlic in thesoup and smash them with a fork so thwy jncoroorate jnto the soup. Then, add some more seasoning (with salt to taste) with grated ginger and garlic and stir through some leafy greens or veges like capsicum, long beans, etc.. For that added crunch. Turn off heat and enjoy ππΏ

Recipes x 3 ππΎππΎππΎ A golden oldie but works every time and it's so versatile. Here's why...from the same mix, you can make a lasagna, lentil wrap filling or bean burger pattie (pic below)... It's absolutely unbelievable! My very own creation and i am sharing with youπΏππ½ππ―
You can add to this by using your own imagination like smoked paprika, roasted garlic/capsicum, grated carrots, spices.. Up to you ππ½ππ½ππ½
Basic ingredients:
1-2 x can of crushed tomatoes with mixed herbs
2-3 cups breadcrumbs
1/8 cup corn flour/corn starch
1 large chopped onion
1 x 375g cooked green lentils (I add 1-2 beef style plantbased stock cubes when preparing this ahead of time)
Generous seasoning to taste
Add all ingredients into a bowl.
Variations:
For the bean patties, use only 2 cups of breadcrumbs (at first and if too moist, add more breadcrumbs) and 1 can of tomatoes. Mix, shape into patties, toss in extra breadcrumbs or sesame seeds, then shallow fry in oil until golden brown on either side.
For Lasagna, use 2 cups of breadcrumbs, 2 cans of crushed tomatoes and omit the cornstarch. Mixture should be moist, so it doesn't dry out and spread on sheets like regular lasagna using our white aioli sauce as the white sauce.
For lentil filling in a wrap, use same ingredients as the bean patties but omit the cornstarch. Add a handful of finely chopped red onions in the mix and some finely chopped parsley. Great in burritos, stuffed in pita bread with our white aioli sauce, in a wrap or as a sandwich filling. ( you can also use the burger patties above and crush them into your burrito, wrap or sandwich. Try it!! πΏπ―ππ½π
