โBawal daw i-reheat ang kanin? โ
I came across this one TikTok video saying that rice cannot be reheated because there is this so-called โReheated Rice Syndromeโ ๐ which is dangerous to our health, and this became a topic of discussion in the web. This term is used to describe the idea that reheating rice can lead to food poisoning due to the growth of bacteria, specifically Bacillus cereus. ๐ฆ
Yes. When cooked rice is left at room temperature for an extended period, it can become a breeding ground for bacteria, including B. cereus. โ๏ธHowever, the risk of food poisoning from rice comes from improper storage and handling rather than from reheating. โ๏ธ
In fact, reheating kills the bacteria, although it may not always kill the heat-stable โtoxinsโ produced by the bacteria during improper storage and handling. These toxins are the dangers to our health, as this is the cause of food poisoning if consumed.

Let us emphasize the importance of safe food handling and storage practices to minimize the risk of foodborne illness! Here are some key points:
๐ Store cooked rice promptly and avoid leaving it at room temperature:
- Refrigerate it within two hours of cooking and do not leave it at room temperature for more than two hours. Room temperature is within the Temperature Danger Zone (TDZ) where bacteria can rapidly multiply, making food unsafe to eat and can potentially causing illness. Following also the Two-Hour/Four-Hour Rule, if it has been sitting out for more than 4 hours, discard it to reduce the risk of foodborne illness.
๐ Reheat rice thoroughly: Using a food thermometer, ensure it reaches an internal temperature of 165ยฐF (74ยฐC) throughout to kill any bacteria present.
No food thermometer? No problem.
- Check that the rice is steaming hot throughout, indicating that it has reached a sufficiently high temperature for bacterial elimination.
- Stir the rice well during reheating to distribute heat evenly, ensuring that all portions of the rice reach the desired temperature.
- Heat the rice for an appropriate amount of time and ensure that the rice has a uniform texture throughout, indicating that it is heated evenly.
๐ Practice good hygiene: Wash hands, utensils, and cooking surfaces thoroughly before and after handling rice to prevent contamination.
Also, always remember to consider individual sensitivities. Let us be mindful that certain individuals, such as those with compromised immune systems or underlying health conditions, may be more susceptible to foodborne illnesses and should take extra precautions.
