Recipe benefits this kid-friendly dinner recipe is easy to prepare, and layered with calcium, potassium, vitamin D, and protein from the mix of cheeses.
Goat and sheep milk cheeses may be substituted for cow milk cheeses.
Daiya brand vegan cheese may be substituted for a non-dairy option.
Ingredients:
2 cups organic ricotta cheese
1 cup organic cottage cheese
1 tsp. garlic, crushed
1 Tbsp. dried parsley
4 cups spaghetti sauce (look for a brand low in sugar)
9 uncooked, gluten-free lasagna noodles
1 cup of organic mozzarella cheese
¼ cup raw-milk Romano cheese, grated
Preparation:
*In a bowl, mix ricotta cheese, cottage cheese, garlic, and dried parsley.
*Pour 1 cup of spaghetti sauce in bottom of a 9x13-inch pan.
*Place 3 uncooked noodles in pan. Spread half of the cheese mixture over noodles, then sprinkle with ½ cup mozzarella cheese.
*Top with 1 cup of sauce, 3 more noodles, the rest of the cheese mix, and another ½ cup of mozzarella cheese.
*Add another cup of sauce, another layer of noodles, and one cup of sauce (4 cups of sauce total).
*Sprinkle with ¼ cup raw-milk Romano cheese (optional).
*Bake covered with foil at 350 °F for one hour. Let cool and cut into 12 equal pieces.
