Servings: 2-4 | Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins
Dietary Notes: Vegetarian, Gluten-Free Option

Ingredients

1 medium zucchini, julienned or shredded
1 medium carrot, julienned or shredded
ยฝ small red onion, thinly sliced
2 eggs
ยฝ cup all-purpose flour (or chickpea flour for GF)
ยผ cup milk (optional, for batter consistency)
ยฝ tsp salt
ยผ tsp black pepper
ยฝ tsp baking powder
Toppings (optional):
ยฝ cup shredded mozzarella
ยผ cup marinara sauce
Fresh basil or oregano
Instructions

Prep veggies: Shred zucchini and carrot. Squeeze out excess moisture with a clean towel.
Make batter: In a bowl, whisk eggs, flour, milk (if using), salt, pepper, and baking powder. Fold in veggies and onion.
Cook base: Heat oil in a 10-inch non-stick skillet. Spread mixture evenly, pressing down. Cook on medium heat for 5-7 mins until golden.
Flip & crisp: Carefully flip (use a plate if needed) and cook another 5 mins.
Add toppings (optional): Spread marinara, sprinkle cheese, and broil 2-3 mins until melted.
Notes

Extra crispy: Press mixture thin and cook longer on low heat.
Dairy-free: Skip cheese or use vegan alternatives
