Vitamin B1(thiamine) involve in energy production via the metabolism of carbohydrates. Found in Whole grains, brown rice, egg yolks, legumes, organs, pork, enriched/fortified products such as cereals, seaweeds, broccoli, Brussel sprouts, watercress, oats, spirulina, alfalfa and herbs including chickweed, nettles, parsley, fennel seed, fenugreek, peppermint, red clover and raspberry leaf. Our body needs fats. Fats are vital for the correct development of our brain in-utero and beyond and throughout our lives we need fat as an energy source, to help build important structures like cell membranes, as well as to support our growth needs. We need fat to insulate our body and to protect our organs. Things only go wrong when we consume more than our required needs.

When our intake exceeds our needs, we see weight gain and a higher risk of heart disease, high blood pressure, colon cancer and many other health issues. Once we reach adulthood, we only need about 25 per cent, or less, of our daily calorie intake to come from fats. If we have any sort of cardiovascular / heart issues, this percentage is often recommended to be much lower.

Carbohydrates include long chains of sugars such as starches (also known as polysaccharides) and the simple sugars themselves.

We find simple sugars in:

Refined sugar (often sourced from sugar cane or sugar beet), and the plethora of products which contain it
*Fruit
*Honey
*Milk
We find starches (polysaccharides) in:

*Grains (and all those foods which contain them, such as pasta, rice, bread and other flour-based products)
*Pulses
*Fruit
*Root vegetables
As you can see, we source our starches (polysaccharides) from plants. Cellulose is an important type of polysaccharide and we know it better as fibre. Whilst we can’t physically digest it and release its sugar, we use it as the bulk that helps keep our large intestine healthy and the different sources of fibre help ‘feed’ the gut microbiome and encourage diversity.
