EASY HOMEMADE CORN MUFFINS!!!

No special ingredients are needed โ€“ No buttermilk, or canned creamed corn โ€“ just simple, fine cornmeal, flour, baking powder, butter, milk, and eggs.
Itโ€™s simple to prepare โ€“ no soaking the cornmeal or special equipment โ€“ just a bowl and a wooden spoon are needed for this recipe.
Melted Butter adds flavor to this recipe instead of the usual vegetable oil most recipes call for. Itโ€™s also added to the pan to promote that beautifully browned exterior.

โ–ข2 cups all-purpose flour
โ–ข2 cups fine cornmeal
โ–ข6 tablespoons granulated sugar more or less depending on how sweet you like your muffins
โ–ข2 tablespoons baking powder
โ–ข1 teaspoon salt
โ–ข4 eggs beaten
โ–ข2 cups milk
โ–ข1 stick (plus 1 teaspoon) salted butter melted and cooled
โ–ข4 tablespoons vegetable oil
Cups โ€“ Metric
Instructions
Pre-heat oven to 425 f/ 220c
Prepare a muffin pan by brushing a thin coating of melted butter over the sections in the pan. Place the buttered pan in the preheated oven while you mix the batter.
Mix dry ingredients in a large bowl and form a well into the middle of the mixture.
Mix egg, milk, melted butter, and oil in a large mixing bowl. Pour into the well of dry ingredients; mix well.
Divide batter into the heated, buttered muffin pan, filling them 3/4 of the way. This makes a large muffin. (20 โ€“ 24 muffins).
Bake for 12-15 minutes, or until light golden brown.
Tips + Notes
This recipe can be easily adapted to be as sweet or savory as you like by adding anything from honey to grated cheese. Test the sweetness of the batter by making a mini pancake in a frying pan and adjusting the sweetness as needed before baking the muffins.
What Cornmeal
This recipe uses fine cornmeal (the photo below) also known as Polenta flour in the UK and Europe. This results in a light, fluffy and moist texture. Using coarse cornmeal will result in a much drier muffin.
Top Tips
Be sure not to over mix the batter. I recommend using a simple wooden spoon instead of an electric mixer as the overworked batter will result in a heavy, dense muffin.
Lumps are fine. When making corn muffins, you want a few lumps in the batter. Theyโ€™ll hydrate during baking give texture.
Always check cornmeal for freshness. Cornmeal can go bad. Good cornmeal will have a sweet smell. Rancid cornmeal will smell stale and musty.

CROCK POT CORN BREAD!!!

Crock Pot Corn Bread is a delicious, moist and easy corn bread recipe. Making corn bread in the slow cooker saves oven space, but also makes the best corn bread you will ever have!

Description:
Slow Cooker Corn Bread

Ingredients:

1 cup yellow cornmeal
1/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon seasoned salt
optional โ€“ 1/2 teaspoon smoked paprika
3/4 cup all purpose flour
2 eggs
3/4 cup milk
1/3 cup vegetable oil
3/4 cup corn (canned and drained, or frozen and thawed)
Instructions
Line the bottom of your slow cooker with foil. Coat with nonstick spray.
In a large bowl whisk together cornmeal, sugar, baking powder, salt, smoked paprika, and flour. Set aside.
In a medium bowl whisk together eggs, milk, and oil.

Add the egg mixture into the cornmeal mixture and stir to combine. Add in the corn and mix until incorporated.
Pour batter into the prepared slow cooker. Cook on high for 1 1/2 hours, or until the center of the cornbread is set.
When removing lid, be careful not to knock the condensation onto the cornbread. Remove slowly, and wipe the condensation off the lid, and replace if needed.
Remove the slow cooker insert (if possible) and allow to cool on a wire rack for 10 minutes. If your slow cooker doesnโ€™t have an insert, turn slow cooker off and allow the cornbread to cool as-is.
Carefully lift foil out of the slow cooker and transfer to a wire rack to cool completely.
Cut into wedges or bars to serve.
Notes:
Store airtight for up to 3 days

You can bake this recipe in the oven in a 9- inch deep dish pie plate for 25 minutes at 350ยฐF

HOME MADE YELLOW CORN BREAD!!!

Slightly sweet golden yellow corn bread. simple homemade bread recipe made with milk, and Greek yogurt, perfect with chili or soup. Make as muffins or a loaf.

INGREDIENTS
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/4 cup unsalted butter
1 cup milk
1 large egg whisked
2 tablespoons Greek yogurt nonfat
INSTRUCTIONS

Preheat oven to 425 degrees.
In a large bowl combine cornmeal, flour, sugar, baking powder, and salt. Stir and set aside. In a medium bowl, combine melted butter, milk, egg and Greek yogurt. Stir until fully combined. Pour liquid mixture into dry mixture. Stir until fully incorporated. Pour into a greased 8 x 8 inch baking pan. Bake for 20-25 minutes or until golden brown.
Alternately you can pour into greased or paper-lined muffin cups. Fill to 2/3 full. Bake muffins for 15-20 minutes.
