“Creamy Tuna Pasta Salad “

Ingredients

1 cup uncooked fusilli pasta
1 can (6.35 ounces) tuna, drained well
¼ cup gherkins pickles, chopped
¼ cup red bell peppers, chopped
¼ cup celery, chopped
½ red onion, peeled and chopped
1 hard-boiled egg, peeled and chopped
¼ cup mayonnaise
½ tablespoon pickle juice
salt and pepper

Instructions
1.In a pot of boiling water, cook pasta according to package directions until al dente.
2.Using a colander, drain pasta and rinse well. Let cool completely.
3.In a large bowl, combine cooked pasta, tuna, gherkins pickles, red bell peppers, celery, red onions, hard-boiled eggs, mayonnaise, and pickle juice.
4.Gently stir to combine. Season with salt and pepper to taste.
5.Refrigerate for about 30 minutes to allow flavors to meld. Serve cold.

“Mango and Cream Cheese Turon"

Ingredients

2 ripe but firm Philippine mangoes
½ cup sugar
12 spring roll wrappers
4 ounces cream cheese, cut into ½-inch thick strips
canola oil

Instructions

1. Slice mangoes and with a spoon, scoop flesh from skin. Discard pits. Cut each side lengthwise into thirds.
2. Separate spring roll wrappers into individual sheets. Cover with a damp paper or kitchen towel. On a clean, flat work surface, lay a wrapper in a diamond shape with one corner facing you.
3. Roll a slice of mango in sugar and arrange horizontally about 2 inches from the bottom corner of the wrapper.
4. Place a strip of cream cheese lengthwise on top of the mango.
5. Fold the bottom corner over the filling and then fold in sides. 6. 6. Starting at the bottom, roll up the wrapper to form a tight log around the filling. Lightly wet the top corner of the wrapper with water and press to seal.
7. In a skillet over medium heat, heat about 1 inch deep of oil to 350 F.
8. Roll sealed spring rolls in sugar and place in a single layer, seam-side down, in the oil. Fry for about 2 to 3 minutes on each side or golden brown and crisp.
With tongs, remove from pan and drain in a metal colander or wire rack. Serve immediately.

Notes
For the best texture and taste, use Manila mangoes and choose ones that are ripe but still firm.

While working, cover the remaining wrappers with a damp kitchen or paper towel to keep from drying out.
Do not drain directly on paper towels as they'll stick.

Total time: 1 hr and 15 minutes

Ingredients

1 tablespoon oil
1 onion, peeled and chopped
3 cloves garlic, peeled and minced
2 pounds beef short ribs
5 ripe Roma tomatoes, chopped
1 tablespoon fish sauce
5 cups water
2 medium potatoes, peeled and diced

1 bunch pechay, chopped
salt and pepper to taste

Instructions
1.Rinse beef ribs and drain well.
2. in a large pot over medium heat, heat oil. Add onions and garlic and cook until softened.
3. Add beef spare ribs and cook, stirring occasionally, until lightly browned.

4. Add tomatoes and cook, mashing with the back of spoon, until softened and release juice.
5.Add fish sauce and continue to cook for about 1 to 2 minutes.
6. Add water and bring to a boil, skimming scum that floats on top. Lower heat, cover, and cook for about 50 to 60 minutes or until meat is fork-tender. Add more water in ½ cup increments as needed to maintain about 5 cups.
7.Add potatoes and cook for about 7 to 10 minutes or until tender.
8. Add pechay and cook for about 2 to 3 minutes or until tender yet crisp.
9. Season with salt and pepper to taste. Serve hot.

Ingredients:
6 eggs
salt and pepper to taste
2 tablespoons canola oil
2 shallots, peeled and chopped
2 cloves garlic, peeled and minced
2 large Roma tomatoes, chopped
1 cup mussel meat, cooked and removed from shell
2 tablespoons oyster sauce
¼ cup green onions, chopped

Instructions
1.Preheat oven to 375 F.
2.In a bowl, combine eggs and salt and pepper to taste. Beat eggs until frothy. Set aside.
3.In a skillet over medium heat, heat oil. Add onions and garlic and cook until softened.
4.Add tomatoes and continue to cook, stirring occasionally, until softened.
5. Add mussels and cook for about 1 to 2 minutes.
6.Add oyster sauce and stir to combine.
7. Add beaten eggs, swirling pan to fully disperse over mussels.
8. Sprinkle green onions on top.
9. Cook for about 2 to 3 minutes or until eggs begin to set at the edges but still wet in the middle.
10. Transfer pan to oven. Continue to cook for about 8 to 10 minutes or until eggs are completely set.
11. Remove from heat and cut into wedges to serve.

Notes:
Thoroughly whip the eggs to remove unmixed white streaks and incorporate air into them for a fluffy texture. Beat until their color is lighter.
Cook the omelet on the stovetop until slightly set but still wet, as it will finish cooking in the oven. If it's browning too much before fully set, tent loosely with a foil.
