Congratulations, Chef Josh, for your 2 Michelin Stars! ⭐️⭐️ Not at all surprised — my daughters and I have been your fans since 2017! From our first degustacion at your old Makati restaurant, to Savage, Test Kitchen, Balmori, Juniper, Helm at Ayala Triangle — we’ve followed your journey (even before you grew your famous moustache 😜).
Always simple, warm, and quietly brilliant — your dishes have always been ⭐️.

I’ll never forget the first time my little Pepita, Liyora, tasted Chef Josh’s dishes back in 2017. At the end of dinner she said, “Mom, this is even better than my favorite restaurant in New York!” I told her to tell the chef — so she did. When Josh asked which restaurant, she replied, “Per Se!” The smile on his face was priceless. 🤩
