Ultimate Creamy Mushroom Chicken Bowl with Roasted Potatoes & Broccoli ๐๐

Ingredients: ๐
For the Chicken:
2 boneless, skinless chicken breasts
Salt and black pepper
1 tbsp olive oil
For the Potatoes:
1 lb baby potatoes
1 tbsp olive oil
Salt and black pepper
For the Vegetables:
2 cups broccoli florets
For the Gnocchi & Sauce:
12 oz potato gnocchi
2 tbsp butter
2 cloves garlic, minced
1 1/2 cups mushrooms, sliced
2/3 cup heavy cream
1/4 cup chicken broth
Fresh parsley, chopped
Instructions: ๐ฉโ๐ณ
Preheat oven to 400ยฐF. Toss potatoes with olive oil, salt, and pepper, then roast for 25โ30 minutes until golden and tender.
Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook for 5โ6 minutes per side until golden and cooked through. Let rest, then slice.
Cook gnocchi in boiling salted water until they float, then drain.
Steam or boil broccoli for 4โ5 minutes until tender-crisp.
In the same skillet, melt butter and cook mushrooms for about 5 minutes until browned. Add garlic and cook for 30 seconds. Pour in cream and chicken broth, simmer until slightly thickened.
Add gnocchi to the sauce and toss to coat. Serve with sliced chicken, roasted potatoes, and broccoli. Garnish with parsley.

Swap gnocchi for pasta or rice if preferred
