CELIAC DISEASE is an autoimmune disease in which the body produces antibodies against gluten in foods. Symptoms range from chronic diarrhea, bloating, gas, and abdominal pain to systemic issues such as profound fatigue, weight loss, iron-deficiency anemia, and skin rashes (dermatitis herpetiformis). Symptoms vary widely, and some people may have no symptoms, while others experience severe malabsorption, joint pain, or neurological problems.
