Let’s get one thing straight:

You were never meant to count eggs.

Today is the 4th year anniversary of my low carb and fitness healthy lifestyle

❌ April 16, 2021 stats: 130 lbs, diabetic with high cholesterol taking Metformin medication for diabetes and statins for high cholesterol.

✅ April 16, 2025 stats: 106 lbs, on diabetes remission for 4 years now, no more Metformin and statins

✅ 4 years…It is a lifestyle. Consistency is key.
- low carb, nutrient-dense food
- walking, strength training, mobility and balancing exercises
- enough sleep and sunlight
- stress management
- dancing
- loving family and friends
- prayers and meditation

I think the healthiest and best thing and easiest to make for a carnivore diet especially for those healing gut disorders is this. Long stewed soft meat.
You need a slow cooker. Get an electric stock pot for £50. They are energy efficient and don’t use much electric.
You simply put your meat in the pot, cover it with water add 2 tablespoons of apple cider vinegar, and 2 tablespoons of sea salt. Both of these help draw out the minerals in the collagen.
Put it onto stew for anywhere from 10 to 18 hours. Then simply serve the broth with your melt in the mouth meat. You can do this with lamb shoulder, oxtail, short ribs, a whole chicken…
So healing. I make one every 2-3 days. Sometimes I boil up some eggs cut them in half and add them in with some crispy bacon on top.
