Sourdough or old-school rustic breads are usually baked in a Dutch oven. I got curious how bread would turn out in a thick aluminum Filipino caldero, so I gave it a shot. Turned out just like it does in a Dutch oven, I didn’t notice any difference.

2 weeks worth of dorm food. This week's dorm serye consists of: Pork Tepanyaki, Salted Eggyolk Porkchop, Chicken & Tofu sisig, Roast Beef & Mushrooms, Parmigiana! Last week's menu: Deconstructed Machang, Inihaw na liempo, Meatballs with Gravy, Parmiagiana (walanh kamatayan😂) and Beef Salpicao.

I honestly had no idea how to make an oxtail soup, I hadn't even tried or tasted it before. I looked up a few recipes online, but most of them seemed too simple and gave off a bland vibe. Since oxtail has a rich and slightly gamey flavor, I thought the best way to balance it was by adding bright, refreshing ingredients like bell peppers and cilantro. The version I came up with is a hearty, one-pot soup inspired by Latin American flavors. It's packed with tender oxtail, cassava, squash, and saba bananas. I flavored it with aromatic herbs like oregano, marjoram, and paprika. It turned out really well, my client even asked for seconds!😊
