It cost me my health and I’m not willing to pay that anymore.
I always saw my health as average. Every winter I’d catch a cold, my skin wasn’t perfect, and I regularly struggled with bloating. I never made it a big deal. I thought everyone had similar struggles, so why would I care? I just went on.
After 10 years in corporate, I discovered my body was suffering more than I knew - a thyroid nodule. And it wasn’t small.
They say people don’t change until the discomfort of staying the same becomes unbearable. This was my wake-up call. I live this life only once. I want it to be meaningful.
So I stopped chasing money. I opened my own practice, see a few clients a day, and spend the rest of my time cooking for family and being in nature. I’ve never been happier.
Maybe you’re on a similar path. You feel the need to change, but it seems out of reach. You can reach out for support. If I could get better, so can you.
And here’s the recipe for keto tiramisu:
Biscuits
50 g almond flour, 2 eggs (M), 2 tbsp erythritol (optional), pinch of salt
Separate eggs. Beat whites with salt until stiff. Add yolks, flour, erythritol, mix on low. Spoon into muffin tin. Bake at 180°C for 12 min. Cool.
Cream
120 ml espresso, 15 g Amaretto, 1 whole egg (M), 1 yolk (M), 35 g erythritol, pinch of salt, 250 g mascarpone, 2 tsp cocoa powder
Cool espresso, stir in Amaretto. Pour boiling water over eggs. Separate (1 white, 2 yolks). Beat yolks with erythritol for 7 min until fluffy. Add mascarpone. Beat white with salt until stiff, fold in.
Dip half the biscuits in coffee, layer in dish, dust with cocoa, spread half the cream. Repeat with remaining biscuits, cocoa, cream. Chill 3 hours. Enjoy!❤️
